Here is when a good old fashioned European before we had refrigeration diet comes into its own.
Stick with foods that do not get bad, like heavily smoked meats, salamis and cheese. Add to that wholesome bread, (I mean the stuff that does not go stale after a few hours, like the supermarket cardboard rubbish that they laughingly call bread), and a stick of butter. Put all of this into one of those insulated boxes and he can make himself a meal wherever he goes.
Obviously include some fruit in season that lasts a while without refrigeration, also some dill pickles and pickled olives go well and add flavour and vitamins.
On top of this add some tinned fish like sardines or tuna from time to time for variety.
European construction workers lived on this kind of diet for centuries and they were generally a hard working and healthy lot. (contrary to what the food faddists would like you to believe)

I assume he will be in a vehicle and will stop for gas (and ice). Go to www.freecycle.org and locate your city. Post a message asking for a cooler--whatever size he might be able to travel with. Then save plastic water bottles and freeze water in them to use in the cooler. From there you can pack cheese, lunch meat, bread, fruit, hard boiled eggs, milk for cereal. He can pack a box of cold cereal, crackers, nuts. He can make breakfast and lunch out of the cooler and perhaps get a hot meal for lunch or supper. You can also get food and or food ideas from your local food shelf. Where there is a will, there is a way! Good luck.

Go to a true asian restaurant and buy some rice. Once it's cooked, you don't really have to store it in a fridge, cooler, or use a microwave as long as you don't leave it out for like 4 days or something.

Is he working for a company? Don't they allow him a food budget? yikes. maybe canned friut, soup that doesn't need to be mixed with water. I know it's cold but at least it's been cooked. trailmix. His best bet is to pick up a days supply well he on rest break . And eat the things that need to be kept cool first. And invest in a cooler, even if you find it in a yardsale.

Peanut butter and jelly, Apples, cooked eggs, fried chicken, green salad (a head of lettuce he can tear and spray on dressing) Fresh tomatoes,cucumber, tuna in foil pouches (they make it preseasoned) pita bread (for the tuna). The food is simple but will keep him nourished and hydrated - don't forget a flat of water and to reduce costs a container of presweetened tea or other instant beverage to add to the water for variety. You could get canned goods. They are not as tasty if they are not heated but they do the trick. That is what I use for my hurricane supplies. Things like canned soup, veggies, what-have-you. If you set the can in the sun for a few hours it will heat it up a bit.
There are canned meats that you could make sandwhiches too.

They will keep for several days in the fridge. Having been cooked they will be sterile. Cold sausages are delicious.

A lot of these ideas are good. As long as you're on freecycle, ask for a thermos too. That'll keep soup hot, and soup is pretty cheap.
