MEATLOAF
Ingredients
1 lb ground beef or ground turkey
½ cup Italian bread crumbs
1 to 2 eggs (depending on consistency)
1 small onion (finely chopped)
1 tsp garlic powder
½ cup green pepper (finely chopped)
1 cup tomato sauce (divided)
Directions
Combine above ingredients using only half of the tomato sauce and one egg (if mixture isn't moist enough add the other egg). Shape mixture into a loaf and place on a greased cookie sheet or in a meat loaf pan. Take the remaining tomato sauce and spread on top of meat loaf. Bake at 350°F for 1 hour.
*For variations, you can use barbecue sauce or ketchup instead of tomato sauce as a topping. Barbecue sauce will give it an extra kick.

Here's a yummy one:
2 lbs ground beef
1 1/2 cups Italian breadcrumbs (or plain)
3/4 jar mild salsa
1/4 cup ketchup
1/2 cup cheddar cheese or mozzarella cheese, small diced
2 dashes basil
2 dashes oregano
2 dashes onion powder
2 dashes garlic powder
1 pinch salt
1 pinch pepper
1 egg
shredded cheese, for the top
Mix all ingredients except shredded cheese for the top.
Form mixture into a loaf pan.
spread a very thin layer of ketchup on top.
Bake at 375 for about 1 - 1 1/2 hours top with cheese, Bake until cheese melts. if the top looks too cooked cover with foil and reduce heat to 350

my fav meatloaf recipe!
EASY BAKE MEATLOAF FOR 4
1 tsp. salt
1 tsp. pepper
1 egg
1/2 sm. onion
1 lb. ground beef
1 can tomato paste
1/2 pkg. beef stew seasoning
1 1/2 c. Pepperidge Farms herb stuffing
Take off your rings! Chop onion finely. Combine salt, pepper, egg, onion, ground beef, 1/2 can of tomato paste, 1/2 package of beef stew seasoning, and herb stuffing; mix together with hands until well blended. Press meat mixture into pan or Pyrex dish lined with Pam. Bake at 350 degrees for 30 minutes. Take out of oven and spread remaining 1/2 of tomato paste on top of loaf. Cook for additional 10 to 15 minutes.

I use a pound of ground meat, 1 egg, ketchup and either bread crumbs or oatmeal, salt & pepper, and sometimes chopped onions. Mix all that together and spread it in pan and then spread more ketchup on top. Bake at 350 until done.

fresh ground beef... 2lbs.. 1 egg, cracker crumbs, ketchup, chopped onion, mix together and put in loaf pan.. top with more ketchup...bake 350 for 1 hour..
