the first on pit road entrance, or the last on pit road exit?

I would almost always take the last one. Or any that have an open spot behind them.

On a number of tracks having the first pit still would be ideal, but not always. There are a number of tracks that have multiple entrances into the garage areas. These gaps allow for a team to have either an easy in, or an easy out. It really depends on who might pit around you. If you have the first stall but a team thats currently ahead of you in the race has the stall behind you, it could be difficult to drive around that car as some pit roads are very narrow and/or have small pit boxes.

It seems like it's usually the one at the end of pit road. Usually the team that wins the pole picks that stall because the driver can just drive it straight out after the pit stop, which helps when it comes to fighting for track position on pit road.

At every track the first pit stall is the best to have because you can get off pit road the best. If you have the first pit stall you have to be below pit road speed so you can stop to get in your stall. If your in the first stall you can get down to pit road speed and then when you leave you can go as fast as possible because there is no way your getting over pit road speed in that little amount of time.

Usually it's the one at the very end of pit road. That way you will never get blocked in or have to worry about speeding coming off of pit road.
