I'm going to be leaving for vacation next week and I will be flying. Is it okay for me to have an EMPTY water bottle in my carry-on going through security? I'm just hoping to save a little $ by not purchasing water bottles at the airport.

I don't see why that would be a problem as long as they are completely empty.

Check with your airline they may not allow you to take emptys on board. Put them in the checked luggage even at the airport a bottle of water is not that expensive.

You'll have no problems...I did that on my flight from Amsterdam to Toronto a couple of weeks ago. Security is only worried about the liquid not the bottle itself.

No problem, and a very good idea. If you want to save some space, you could get a collapsible water bottle, available at sports/camping stores like REI.
