Sautee most of the veggies you have (use common sense with this, no potatoes, lettuce, corn, etc.). Generally I will use peppers, onions, zucchini, eggplant, mushrooms, and/or shredded carrots. Make sure that you season this with salt and pepper at least. Generally I have fresh garlic on hand so I add that. Whatever I have left over in the fridge. To this I add 1 large can of tomatoes, whatever kind I have. If I have leftover chicken, olives, capers, fresh basil, etc. I drop them in at the last minute. Then toss in cooked pasta and top with parm cheese.

I like to cook chicken breasts on the stove with dressings (Italian or Raspberry Vinegarette are my favorites). It gives you wonderfully seasoned chicken withouth having to hunt down seasonings.
I serve mine sliced in strips over rice (if I have company) or over a bed of romaine lettuce and baby spinach (if it's just me). Pasta is also something great to serve it over (I like spirals). If you stick with the salad idea, it's quite healthy.
