Not only wait for the check, but wait for the check to clear your bank. Probably take at least 10 days.
You would be better to request a postal money order. You could cash it at the post office and not worry about whether the check was good or not.

Yes, I would wait for the check and then wait and make sure it clears before you mail the item. I would check and follow ebay rules/procedure on this too. I think the best thing to do is not to accept checks as a method of pay. Use the direct account withdrawal with a debit/credit card. This is the fastest and easiest way, at least for me, when selling/buying on ebay.
Also, email the buyer and let them know that you are waiting for the check and for it to clear before mailing their purchase.

You wait for the check, AND you wait for some time after depositing the check to insure that it clears the bank. It might be advisable to retain the name of the bank involved and contact them within a reasonable period of time after depositing the check. If you retain the number of the check and the amount for which it was written, they may verify to you whether or not it has cleared.
