EASY EASY BAKED PEPPER CHICKEN
6 uncooked chicken breasts
2 cups onions and peppers (thinly sliced)
2 tsp pepper
2 tsp basil seasoning
1/4 cup olive oil, separated in 1/8 cups
Preheat the oven to 350 degrees. Line a deep baking pan (9x13) with foil (this will reduce clean-up time) and seal the heat. Drizzle the foil layer with olive oil to avoid sticking Sprinkle foil with some of the pepper and basil Lay the chicken breasts on the oil-seasoning mixture, spread out, and drizzle lightly with olive oil. Use a brush or spoon to distribute the oil evenly on top of the chicken Sprinkle the chicken with remaining seasoning, to taste Sprinkle the chicken with the onions and peppers.
Important: Cover the pan with another layer of foil, and seal the sides. Bake for 30-45 minutes, or until the center of the chicken is no longer pink.
It'll be the juiciest, most tender baked chicken you've ever had - no need for a knife. Best over rice and sauteed vegetables.

There are a lot.
You could through the chicken and any vegetables into a crockpot and let it do the work and make soup.
You could put stovetop stuffing in the bottom of a 13x9x2 inch baking pan and put the chicken on top and bake for 1/2 an hour.

slice your chicken breasts down the sides(so it makes an opening,dont cut right through), stuff with mozzorella cheese then wrap with bacon and put them in the oven for approx 20 mins. Tastes delicious and the chicken stays moist because of the bacon.

Put chicken in casserole dish and pour over a sauce made of salsa and pineapple-apricot jam, diced yellow and green bellpeppers, salt and pepper to taste. Bake in oven and serve over white rice. Crusty bread on the side or a green salad is nice.

Easy Creamy Chicken and Dumplings
Ingredients:
* 1 tablespoon all purpose flour
* 12 ounces skinless, boneless chicken breast halves or thighs, cut into one inch pieces
* 2 tablespoons margarine or butter
* 1 stalk of celery, sliced
* 1 medium carrot, chopped
* 1 onion, cut into wedges
* 1 1/4 cups chicken broth
* 1 10 3/4 ounce can condensed cream of chicken with herbs soup
* 1/8 teaspoon pepper
* 1 4.5-ounce package (6) refrigerated buttermilk biscuits*
1 cup frozen peas
Method
Place flour in a plastic bag. Add chicken pieces and shake until coated. In large saucepan cook chicken, celery and onion in hot margarine for 2-3 minutes or until chicken is brown. Stir in broth, condensed soup and pepper. Bring to boiling, reduce heat. Simmer covered about 20 minutes or until chicken and vegetables are tender. Meanwhile separate biscuits. Cut each biscuit into quarters. Stir peas into chicken mixture: return to boiling. Place biscuit pieces on top of chicken mixture. Simmer, covered over medium-low heat 10-15 minutes or until a toothpick inserted in center of biscuit comes out clean. Serve in bowls.
Notes: As an option, substitute drop biscuits for refrigerated biscuits. To prepare, in a medium bowl combine 1 cup packaged biscuit mix and 1/3 cup milk. Drop mixture by teaspoonfuls into 8 dumplings on top of chicken mixture. Cook, covered, as directed.

Take your chicken (whatever meat it is) and pull it off the bone so its shredded. Mix in a large bowl with sour cream (I use light or fat free), one of those cheese blends ina bag (like Mexican) , finely diced up jalapneos, salt and peper. Layer it in a casserole with flour tortillas cut into strips or wedges (so it kinda sits like a lasagna) and bake...350 - 1 hour. Top it w/ salsa, more sour cream (if desired), guacomole....its so good and really very easy.

a great way to cook chicken fast and delicious is to cover the raw chicken in flour and a little cheese and cook it on the stove until the batter is formed on the chicken and its cooked thoroughly and then you can add a side of pasta-roni or ricea-roni. or just steam some veggies and add them.
