Bacteria in the intestine (specifically the large intestine) cause the remaining material from your food to break down and/or ferment, which releases gasses, some of which in sufficient concentrations can be used as chemical weapons...but you'd have to fart several times a minute for days into a hermetically sealed environment for them to reach hazardous levels.
Anyway, the gasses are moved along the intestine with the solid waste. Once the pressure becomes high enough, the anal sphincter fails (or the victim releases it), and gas passes.
