Sunny 15-25C / Cloudy 10-20C. We have a dry winter but still get some rain. Relative Humidity will down to around 50-60.
I personally prefer the countryside.
But a tourist should try Ocean Park midweek and avoid Disneyland. The Peak is good for a half-day then walk around the peak trail and visit the WW2 gunbatteries overlooking the sea. Incidentally this the perfect place to see the famous HK sunset, then walk back round to get the night view from the peak over the harbour. Hopefully the pollution won't be bad. Back down to Lan Kwai Fong or SoHo for dinner and drinks. Lantau should also be seen, but unless your Buddhist don't go to the Buddha - it's packed and a rip-off. Just take a bus-ride (midweek) from the ferry at Mui Wo to the Tai O fishing village then back. The village used to be great but a fire destroyed a lot of old stilt houses and it's gone a bit touristy but the busride will make for it. Stop off at Cheung Sha Beach for a walk and the eastern end is a great restuarant and the western end is a good pub. The beach takes about 30/40 mins to walk along. Get on a tram on Hong Kong Island and ride it back and forth till you get bored. It runs along the island back and forth so you can get off and get back on and still find your way back. December is the perfect month to do it (not hot) and avoid rush-hour.
Don't shop in TsimShaTsui or visit Temple Street unless you are with a local who has been here awhile.
You'll have to check with your country of origin about jabs, they might be trying to prevent something from getting in. As for this end, we are a melting pot at the confluence of regions and everthing passes through here. But I have never been ill or gotten any jabs and I've lived here 23yrs. I probably have antibodies of Malaria, Tuberculosis and 2 types of Hepatitis though as I've known people with the disease. And that's without living the colourful life that is usually associated with such people. These diseases are endemic in the region. But a tourist shouldn't have a problem.
The racecourse still closes in summer though they want to change that. But over the winter (Nov - April) there is racing twice (sometimes 3 times) a week. Wednesday nights and Saturday afternoons with an occasional Sunday special event. Check to see which course. Happy Valley is the famous one in the city, Shatin Racecourse is in ....well ,Shatin. Which is a bit further out.

The thing I like MOST about HK is NOT staying in the main part of the city. For me it's too noisy and congested. I always stay at a place called Mui Wo (pronounce Mooee Woe) - nice little hotel called Silvermine Beach. It's on Lantau Island about an hour or so from the airport. I much prefer to take the ferry frrom Lantau to Central and watch the skyline of HK slowly pass by. No jabs needed. Places to go? Shopping and eating in Kowloon (also rather dubious nightlife - be careful!). Even better shopping in Causeway Bay (I think) and you have to go on the funicular railway to Victoria Peak for stunning views acdross the city. If you have time take one of the ferries to Shenzhen or Guanzhou (in China) to experience the different life (visa needed); also it's possible to take a hydrofoil to Macau for a taste of Portuguese influence! See yu there! Weather in December can be a little cloudy and rainy but temperatures OK.

I like the Hk subway system (the MTR) and the neat attractions. The weather is quite warm in dec. Best place to go would be Golden Bauhinia Square in wanchai and ocean park in hong kong island. Take the mtr. it's fun! No shots are required to enter hong kong, but you could if you want. Don't know the answer for the racecourse question.

You wont need jabs. Weather is ok in Dec but not that hot. Best places are Stanley Street market, get decent fakes there and its a nice area to have a meal. Also the underground system is fab, its clean and cheap. And there are shops galore.

UNLIKE MAINLAND CHINESE, I LIKE HONG KONG BECAUSE:
1) HK have manors, they don't spit, pick their nose, or urinate in public.
2) HK people are not rude, but polite. They act like other civilized people in the world (or non Chinese) and do things like ; wait in line, or wait until people exit a train before rushing in.
3) Like civilized non-Chinese people, the car drivers there do not fight pedestrians for the road. Cars and buses will give the right of way to the pedestrian if they both have the green light.
4) The public bathrooms are clean and don't smell like piss and sh--.
Here are just a few things I like about HK, and a bit of what I hate about China. This is all I will say for now, but by no means is this all I hate about China.

The weather is mild, not very cold nor warm.
The best places?? EVERYWHERE, mainly, MongKok, Tsim Sha Tsui, and Causeway Bay. Try to Ladies Market, Temple ST, and use the MTR railway, it is fast, clean and you will fall in love with it.

you will need a jacket. it doesn't have to be thick.
best places to go: Tsim tsa chou, mong kok, kowloon
i think the race course is open everyday.
