The old standard was to send yourself a certified letter containing a complete description and keep the sealed envelope, but that may or may not be honored or accepted by a court. The best thing is formal registration with the proper government agency, but there can be significant expense involved in obtaining the documentation.

Sue them if they do. Keep proof that it is your intellectual property and that you pitched the idea in the first place.
