Did you write a check, or are you afraid someone stole it? What you can do, is get in touch with the bank, and ask if anyone has cashed a check from your account, if you don't remember writing it, then you have a problem.

A number of things you can do:
If you want to know if a check was cashed -- you wrote it, you don't know if they cashed it -- you can go online and view your account. You can even see a photocopy of the check to see the signature on the back.
If you're asking if someone might have stolen a check, you can check your account online to see if there are any checks you didn't write, or amounts you don't recognize.
You can also call your bank and tell them what you know, and ask them to review your account with you. They may even have a 24-hour hotline if you suspect fraud or identity theft.

Yes, go to your bank and ask for a transaction history for your account.

I don't quite understand your question, but yes...banks, by law, have to keep records of every transaction.
