Would you condsider this recipe healthy ???


Fresh Corn and Tomato Soup

1 tablespoon olive oil
2 large onions, chopped
10 ears corn, husked and cut from the cob, or 10 cups frozen corn kernels (4 [10-ounce] packages)
10 cup chicken or vegetable stock
5 large tomatoes, chopped
1 tablespoon salt
1 teaspoon cracked black pepper
1/2 cup sour cream
8 sprigs dill

Heat oil in a large pot over medium-low heat and cook onions without browning until tender, about 10 to 12 minutes. Stir in the corn and cook for 2 minutes. Add the stock and bring to a boil. Reduce heat and simmer until corn is tender and liquid has reduced slightly, 15 to 20 minutes. Add tomatoes, salt, and pepper, stir, and remove from heat.

Yield: Makes 8 servings

By the way... i did not determine the nutritional data it came with the recipe. And that data includes the "dallop"of sour cream that I took out of the recipe as well. The sour cream was to be added to the top of the soup but I left it off.

Take out the sour cream and it sounds pretty healthy.

1] your fat, protein , and carb counts or calorie counts area little off - they add up to 252 calories. How do you get 0% from fat, right before the fat grams?
8 grams fat @ 9 cal/gram = 72 calories,
11 grams protein @ 4 cal/gm. = 44 cal,
34 grams carb @ 4 cal/gm = 136 cal; total = 252
OVERALL:
in a 1,500 cal diet, it supplies 16% of calories, 1/6 of RDA
there should be;
45 grams of fat per day - soup has 8 [ a bit over ]
200 grams of carbs - soup has 34 [ good ]
20 grams fiber - this has 5 [ good ]
less than 2,000 mg. sodium - this has 994 [ a lot over ]
Suggestions:
1] use less salt and more spices
2] use low fat or fat free sour cream or yogurt
3] have with a chicken sandwich!
By the way, sour cream is not dairy, it is FAT!

Yes, that sounds healthy, because it has high amounts of fruits and vegetables (Tomato is a fruit), a small amount of HDL fats, and some dairy to top it off. It sounds like a very healthy, balanced meal, and looks like it will be delicious.

the carbs and sodium are pretty high but there are simple ways to reduce that. ex) type of chicken stock you buy
not too bad, might try some other veggies and/or actual meat
