Paul clearly writes that a DAY with God is like a thousand years to man. therefore the 7 days of creation might be seven thousand years. but the visions of abraham or moses (whereever the origin of genesis comes from) can be visions of 24 hour periods of time.
as for the extended creation of earth and heaven, think of God the Father teaching all the angels and His ONLY begotten Son how to create things. afterall it is written that NOTHING that is created was not created without Jesus.
think about how a spirit can learn to create,? !!! before you can create a cell, you have to design how the cell is going to be created, and if a person is newly born, such a person must be taught first how to do it, or spend the time to learn.

Six days with a nice whole story-book process included is much more interesting than a snap of the fingers. Bible writers wanted to stretch it out, give God more of a human spin. Who would've believed that God could create something as complicated as the Earth in a minute? When it takes us like ten minutes to make a taco? Pssh, no. Bible writers wanted to make it believable, appearing as if God had thought long and hard about it.
Personally? I believe it took millions of years for the Earth to form... but that's ok.

It can be a lesson.

Example; the Hilton hotel chain heiress, has not really worked a day in her life.
Neither has Di's two sons.

I really don't know but, it did have to be days and not years because when Adam and Eve sinned they brought death into the world and there could have been no death before the fall of man.
If creation had lasted for years, there would have had to have been deaths during that length of time.

Because the men that created God couldn't concieve that "everything" could be created in the blink of God's eye...so they made it take one day for each category of "things" they could imagine.
