It depends on how much you want to spend, and how much time you want to spend out on the water.
I work for a local charter company that does alot of offshore fishing trips.
It ranges from like a 4 hour trip for around $40-$50 and barely get any fishing time because of the long ride offshore, or about $300 for a 40hour trip, where you spend a couple days on a boat.
Then there are private charters where you have the boat and captain to yourself, which could cost you a couple thousand, but still dependin on what you want to spend money and time wise.

It really depends on the location, the duration of the trip, how far the boat has to run, number of people on the boat, and so on.
A basic half-day trip out of southern California might run $35 for the boat ticket, for which you get about 5 hours on the water, as well as bait. (In general these trips spend less than half the time traveling, so you can expect 3-4 hours of actual fishing.) An all-day trip (6am-4pm or so) will run roughly $60-$70, an overnight trip (11PM to 6PM) to the islands will run $100-125, or offshore for tuna maybe $50 more. If you're fishing in Mexican waters (like out of San Diego) these prices go up (license, insurance, etc.), if you're going on a limited load trip or a charter (fewer people on the boat) it also costs more. The multi-day long range trips out of San Diego are currently running a bit over $300 per day.
Most landings have websites where you can check prices (as well as fish counts).
In addition, if you need to rent tackle, it can cost $5-10 or so. Then if you need to buy meals, drinks, etc., figure $5-10 per meal, depending on your appetite. (On some of the limited load or charters, tackle and/or food may be included. On multi-day trips, food is almost always included.) Finally, if you want to have your fish cleaned or tip the crew, that can add up as well. So be prepared for these extra costs.
As far as other parts of the country, do a search for the landing or boat websites -- they ought to post prices -- but I'd guess they aren't too different from southern California.

Price varies depending on if you charter a boat are use a "headboat"/ partyboat. Chartering a boat is usually a max of 6 people and called a six pack trip but cost anywhere from 1200-1700 here (North Carolina) The head boat which is a lot bigger boat also varies 30-70 for a day and 200-600 for a teo day are three day trip. I have done both types of trips and had a good time on both. Good Luck!

I am a fishing guide of 3yrs up here in Northwest BC. For a salmon trip I charge 60 dollars a head. For Halibut, ling cod trip I charge 75 dollars a head. If my customers do not limit out or catch near bag limits then the trip is on me. I supply the gear and bait, customers supply their own food and refreshments. Check with the charter companies policies for bad fishing days. A good company will put you on the fish, and it's up to you to catch them. I have personally caught allot of my customers fish when they needed some kind of help. Lot's of charters go to the same grounds day after day and Lot's of folks don't catch any fish because of it. Don't let the charter company play the beautiful scenery card on a bad fishing day, that's bull crap. If you are catching fish and folks are getting lots of bites then the deckhand deserves a nice tip. But please don't tip for a joy ride, you can ride on a ferry for that. I have been on lots of charters on the East and West coast, where the crew feel they deserve a tip whether the customer caught fish or not. I refuse to run my business like that.

You didn't specify what area you were planning on fishing. So I will be general.
Usually private charters ("six-pack") will run from 3-600.00 for a half day, and about 750.00-1500.00 for a full day.
Head boats / party boats are far less expensive, usually 50-100.00 per person. But you fish with a bunch of people and you go with the flow. On a private charter there are usually more options. And you go with the people you want to fish with.
It depends a lot on where the boat goes and what kind of fish you are chasing.

I went deep sea fishing on a headboat in Maine. It cost $70. In total, there were 20 others fishing on he boat. We went off the coast of Massachusetts to fish in 300 feet of water for codfish.

My in-law just went and it was like $110 per person. It was off of WA. He went with 10+ and it was for salmon. Not including the hotel the night before, he didn't want to drive 5 hours that early, boat left in early am.

I went one time off of Cozumel. It was ridiculously hot that day (100+) and the boat had horrible diesel fumes so my wife ended up puking over the side of the boat. We basically caught one fish for each person and that's it. One woman did catch a large barricuda which was pretty cool
