I cook my chili in a crockpot - on low and slowly so that the flavors blend well. I like to use flank steak (Texas style) instead of hamburger and I definitely like to include kidney beans. I always add diced onions and peppers. Yes, I definitely serve my chili with a side of cornbread.

I use a slow cooker all day makes the best chili. I use hamburg and a spicy sauceage with tomatoes, green pepper, red peppers onions, lots of chili powder, tomato sauce. I usually buy the tomatoes and tomato sauce that are already seasoned with onions and peppers.
Sometimes I use corn bread or biscuits.

For meat, lean chuck. Grind my own chili powder from a blend of chiles, easy on the cumin. It needs to simmer slow, must have onions. I like beans in mine but sometimes make "pure" chili. Really do need cornbread, maybe good hard biscuits to sop up some gravy.

In NM we dont cook that kind of chili. We have a red or green, but since you asked i like both especially with beans, and a tortilla or sopaipilla.

i cook mine over the fire, with some mayonaise, and hot sauce, horse radish, spinich, tomatoes, onions, green peppers, brussel sprouts, and i do use cornbred but i have a special recipe for that, but whenever i make it there is tons of leftovers!!! i don't know why though.
