Have fun !!

CAMP APPLE DESSERT

1 apple, sliced, cored, keep skins on
2 tbsp. coconut
2 to 3 dates, chopped
2 tbsp. chopped walnuts
2 tbsp. brown sugar
2 tbsp. butter
A few mini marshmallows

Combine all in foil packages, set around coals of camp fire and cook 30 to 40 minutes turning every so often, let cool 15 minutes before eating.

CAMP DINNER

1 lb. Echrich sausage (or 1 lb. hamburger meat)
1 lg. onion, chopped
2-3 carrots, washed, peeled, chopped
2 potatoes, washed, peeled, cubed
1 stalk celery, washed, chopped

Can add or substitute additional vegetables as desired.
Cut sausage crosswise (or, if using hamburger meat simply season to taste with salt/pepper). Mix all ingredients together in large bowl, (if using hamburger make individual patties mixed with all of the vegetable in meat).

Enclose mixture in individual foil containers, or wrap individually in foil paper. Wrap tightly! Cook over campfire grill, or in oven for about 30 minutes at 350 F.

If using sausage, all ingredients can be mixed together and cooked in skillet with a little water.

The meat and/or sausage flavors the vegetables and the vegetables flavor the meat! A good, hot, quick meal when no one really wants to cook.

Well for breakfast you can have oatmeal. Super simple and easy. I usually put about a cup of oatmeal in a gallon Ziploc bag with some brown sugar, cinnamon, raisins, cranberries, and a pinch of salt. boil up some water roll the ba down to make a bowl adn eat it right out of the Ziploc, no mess simple. Or you can just have granola bars, pop tarts, or some cereal in a Ziploc. Lunch- I usually just have a dried sausage or pepperoni with some cheese. Hard cheeses stay good for upto a week, even in the summer. the trick is that you cant touch the cheese with your fingers bc the oils break down the cheese. So keep it in its plastic and cut off what you are going to eat. Sure it`ll get a little soft but it wont melt. nagged lunch is usually normal on the first day, quick and easy. Dinner- You can keep it simple or you can go all out. For the simpletons I`d say stick with Rice or Pasta. The Rice-a-roni stuff is ok if you want a flavored rice or you can get the boil bags of rice. Heat up some sauce throw some meat on the grill- chicken, beef, sausage and you got yourself a quick easy meal. A stew over egg noodles or rice is also real easy, just cut and prep everything before hand put them in ziplocks throw them in the pot and you have stew. Let it simmer for a couple of hours and you`ll be stuffed for the rest of the night. I like to go with Shish kabobs over an open fire. Again prep them at home chicken, beef, lamb, shrimp- whatever you like throw on some green and red peppers some cherry tomatoes and some onion. I prefer the wooden skewers so you can just thrw them into the fire when your done. Clean up is minimal- the grill which can be self cleaned if you leave it on hot coals. After dinner snack i like to get the pillsbury crescent rolls fill it with some apple pie filling throw it into an aluminum foil pocket with a wad of butter a little brown sugar, cinnamon and throw it onto the coals flip after a few minutes (the foil pocket not you) you`ll be all set. If you need bread consider using either Pita Bread (the pocket bread) or tortilla wraps, its hard to crush these on a trip and they work just as well as regular bread. Do a search on other questions like yours, there are hundreds of them out there, this is a frequent question. I have plenty of ideas/recipes email me if you have any questions

I'm trying to suggest things that don't need to be kept in a cooler to make it even easier for you:

Pancake mix that is in a container that you only need to add water to (sorry I can't remember the brand!)

Any pasta - you can cook it over the fire in a pan and heat some bottled sauce as well

Rice mixes; soup; canned chili; canned beans

Grilled Cheese sandwiches - of course the cheese will need to be kept in a cooler.

The coolest thing I have seen in some time is breakfast burritos. 1 big pan full of boiling water. Zip lock bags that you can cook in.Chop up anything you may want in with your eggs in bowls. Have everyone put 2-3 eggs in the bag + what ever else they want. Write their name on it and boil until done. I'm sorry I can't remember how long to cook. Eat it right out of the bag.

Hot dogs are easy to cook over the fire. Sandwiches are easy as well. Anything can cook in foil if you prepare it ahead of time.

there are two philosophies on that

buy prepared things : chips, middle eastern food, beef jerky, fruits and veggies , and then just enjoy watching the fire

or, buy a 2 inch think 3 pound steak , and potatoes wrapped in foil in the fire

and some veggies
