Labs are great bird dogs-- they are used as both water dogs and dry-land dogs. Some even point (much more $$ for those, though).
I have a yellow Lab that comes from a long line of field dogs and he's been used on pheasant, ducks and geese- so far. (He's only 2 and I'm new [as in hunting] to all of this as well).

Brittanies make good all-purpose hunting dogs. They will go after waterfowl, as well as pointing and retrieving dry-land fowl. You could also get a lab, because they go after waterfowl and dry-land birds as well, but I think most don't point.

Weimaraner. They were bred to hunt all day and are very close to their people. They like water and have been bred to have a gentle bite when retrieving. However they have quirky personalities and are not for everyone.

A F1 Labradoodle....My husband hunts all the fowl that you mentioned and he uses a Labradoodle and the first time he took her out she was only 7 mo old and did better than 3 labs that had been professionally trained to duck hunt and my husband trained her himself.
Edit: Links below are LABRADOODLES that bird hunt.....believe it or not.

Try German shepards, i dont know if they are hunting dogs but they are loyal, and attracted to smaller and sometimes bigger animals, and they have a wolf instinct so that may try as well. but try "hunting dogs" on google, that may help
