Awww congrats!!!! Here is a really great meal, I hope you and your new hubby like it!!
Just leave out the onions, it won't be a problem at all
BUTTERMILK CHICKEN DINNER
3/4 c. water
1 tbsp. chicken bouillon granules
1/2 tsp. dried rosemary
1/2 tsp. dried thyme
2 bay leaves
1 (3 - 3 1/2 lb.) broiler-fryer chicken
3 med. red potatoes, peeled & quartered
2 med. onions, sliced
1 c. carrots, sliced 1/4" thick
1/2 c. buttermilk
1/4 c. all purpose flour
Paprika
In 3 quart casserole combine water, bouillon granules, thyme, rosemary and bay leaves. Rinse chicken, pat dry. Place breast down in casserole. Cook, covered, on high power 10 minutes. Turn chicken over. Arrange potatoes, onions and carrots around chicken. Cook on medium power 30 to 40 minutes or until drumsticks move easily in sockets and vegetables are tender, giving dish half turn and re-arranging vegetables once. Transfer to platter, keep warm. Skim fat from pan juices into a 4 cup glass measure. Combine the buttermilk and flour and stir into measure. Cook on high, uncovered, for 3 to 4 minutes or until thickened and bubbly, stirring every minute. Sprinkle chicken with paprika. Spoon some of the gravy over the chicken and vegetables. Pass remaining gravy. Makes 6 servings.

I like buying the canned Alfredo sauce and adding freshly grated Parmesan cheese to it.
Just boil some pasta (try fun shapes like bow tie, or multicolored), and heat the sauce on the stove.
When the sauce is hot add a small bit of the Parmesan and mix well, taste, and add more if you like.
Then strain the pasta, serve onto plates, and pour the sauce on top.
It looks fancy, tastes great, and it's really easy.
Also, buy some French bread, butter, sprinkle with garlic salt, bake and serve that too. (they also make some with the butter and garlic already on it)

I recommend this recipe for now and forever as a keeper in the recipe book. It is a simple one pie dish and I dont know what it is about it but my father and my boyfriend just devour it whole.
"Pizza Rustica" from Kraftfoods.com. It is easy to whip together and it is a great main dish either alone or with fruits and veggies on the side.
The key is to follow the recipe, but add one frozen package of spinach (with cream sauce). I also prefer using sweet turkey sausage instead of regular sausage. (link to recipe below)
Another easy and healthy meal is stir-fry. Just keep a habit of having a bag of mixed frozen veggies (many dont have onions) available and some rice, and then you can just use whatever meat you have on hand. Our favorite is to add peanut butter and un-salted nuts to the mixture for a thai peanut version.
Happy cooking!

Easy enchiladas
buy 2 large cans of enchilada sauce green or red, green is less dry and yummy
you will need corn tortillas
potatoes, chicken or cheese for filling
Process:
cook enchilada sauce in a sauce pan on med heat (make sure to stir) turn off heat once you see sauce boiling
cook tortillas
then you can dip tortillas 1 by one into sauce careful you might want to use prongs for this.(make sure you cover whole tortilla in sauce)
put the tortillas right on the serving plate fill with cheese, chicken or potatoes and roll up ( I sometimes throw them in the microwave if they need extra heating)
then add some extra sauce and cheese on top and serve with sour cream and a salad. They are quick easy and delicious, not the traditional way of making them but definitely, way easier than my grandmas!:) good luck and have fun!

Depending on his ethnic or traditional tastes there ar litterally 1000's of fast easy meals that you can prepare and serve to your man.
I am a Chef, but my wife loves to cook too, she knows that I like the simplest dishes when I come home from work.
I think if you made him a simple casserole, that he would love it just because you did it, but I am goig to give a Bam to a very simple dish
Boil spaghetti set aside enough to make two layers
While the noodles are cooking , in a sauce pan add 1/4 cup sliced green and red pepers, and sliced mushrooms w/ two table spoons of butter and one teaspoon of chopped garlic, saute until tender, or the way you prefer. after they are done add 1/4 cup of you favorite wine and steep for a couple of minutes, then add a small can of hunts tomato sauce and one large jar of your choice of spaghetti sauce, my wife likes ragu, add a tea spoon of Italian seasoning to the mix stire and cook covered for 20 mins on med heat.
get grated motzerrella, parmesan and cheddar cheese, or buy whole and grate your self, this is best, enough for three layers.
when all is done in a sprayed w/ pam, medium glass pyrex rectangle dish layer as follows
sauce, just enough to lightly cover the botom of the dish
a layer of noodles
another layer of sauce more here than on the bottom
a layer of the cheese mix ( do not scrimp here)
the remainder of the sauce
more cheese mix to cover
sprinkle paprika over top of cheese for garnish
bake in pre-heated 350 degree oven for thirty mins.
Walla Spaghetti Casserole ala you
Serve with garlic bread and wine you will his forever

Congratulations on having a new husband! First things first, when you can, purchase the Taste of Home Cookbook. Its filled with tons of great recipes that are simple to make, nutritious, and palate pleasing. Second, what does your husband love to eat? There are tons of variations on chicken, beef, and pork dishes as well as pastas. Here are some of my favorite recipes to share with family and friends:
1. The Best Mashed Potatoes: 4 Yukon Gold Potatoes (large); 1 box organic chicken broth, 1/2 cube butter, 1/2 - 3/4 cup light sour cream, 1 T kosher salt, 1/2 tsp fresh ground pepper, 1/4 tsp garlic powder. Cook potatos in chicken broth until done. Drain and add butter and sour cream. Mash until smooth and add salt, pepper and garlic powder. Adjust seasonings to taste. If you're adventurous, add 3 T cream cheese to the mix.
2. Meatloaf: 2 lbs lean ground beef, 2 packages Liptons Garlic and Herb Soup Mix, 2 eggs, 2 T Worcestershire Sauce, 1 tsp kosher salt, 1//4 tsp fresh ground pepper,1/2 - 3/4 cup Italian bread crumbs, 1 15 oz can diced tomatos, 5 slices bacon, 1 T dijon mustard, 2 T brown sugar, 1/2 cup parmesan cheese. In skillet, brown bacon after chopping it and add tomatos. Simmer to reduce and season with salt and pepper. In mixing bowl, add beef, soup mix, eggs, parmesan cheese, bread crumbs,Worcestershire sauce, salt and pepper. Mix well. Add 1/2 of the tomato mixture and mix well. Form into a loaf and place in your baking dish. Make a slight indentation down the loaf and top with tomato mixture. Bake covered for 1 hour at 350 degrees. Goes great with Yukon Gold mashed potatoes.
3. Green beans and Lemon: 1/2 lb. fresh green beans, 1 lemon, 1/2 cube butter, kosher salt and pepper. Trim ends off of green beans and place in steamer. Steam until crisp tender and remove from heat. Toss with salt, pepper and butter. Add 1 T lemon juice and 1/4 tsp lemon zest. Adjust seasonings to taste and add fresh ground pepper.
