JALAPENO BACON FABULOSOS

2 lb. jalapenos
2 8 oz. pkg. cream cheese
2 pkg. bacon or turkey bacon

Pre-heat oven to 400F.
Seed and remove end from jalapenos. Be sure to remove all of the seeds!

Cut large jalapenos in half. Stuff with cream cheese.

Wrap each jalapeno with a 1/2 slice bacon.

Lay in dish with end-of-wrap side down.

Bake for 30 min to 1 hr depending on desired degree of doneness. I like them crispy.

As they cook, pour off grease.

ARMADILLO EGGS-JALAPENOS

2 lbs. pork sausage (plain or spicy)
8 oz. mozzarella cheese (shredded)
6 to 8 jumbo jalapenos (the larger the better)
1 box pork Shake n' Bake

Make slit in top of jalapenos to remove seeds and membranes, then stuff with cheese so you can close pepper to original shape.
Encase peppers with sausage so they are completely surrounded (if not you'll lose cheese when baking).

Roll sausage peppers in Shake n' Bake until completely coated, ends too.

Place baking rack on cookie sheet (this will allow grease to flow downward without sogging the peppers) and spray with no-stick spray. Place peppers on baking rack.

Bake at 325°F for 45 minutes. Turn peppers over half way through. Monitor baking during last ten minutes so cheese doesn't bake out. Allow to cool a few minutes before serving.

Enjoy this spicy treat.

Ingredients:
6 to 12 fresh jalapenos, stems remove, d
12 tomatillos, husks removed
1/2 white onion, chopped
2 cloves garlic, chopped
1/3 cup white wine vinegar
2/3 cup water
2 tbsp sugar
1 1/2 tsp salt
1 bunch cilantro, chopped

Instructions:
Combine all the ingredients except cilantro in a pot and bring to a
boil. Cover, lover the heat, and simmer for about 10 minutes or until
the tomatillos are soft. Remove from the heat and allow to cool.
Transfer the cooled ingredients and the liquid to a blender. Add the
cilantro, and puree until smooth and uniformly green. Refrigerate.
Makes about two cups. Serve cold or at room temperature. It's
wonderful served with grilled meats....a pork chop, for example. It's
also very nice mixed with some yogurt to toss with hot pasta for a
low-fat quick dinner. And stir some into some soup; it will perk up
almost anything without being overwhelming.

Grilled tuna with cherry tomato coulis Ingredients : 4 tuna steaks 1kg cherry tomatoes (or very ripe ordinary tomatoes) 4 cloves garlic Salt Pepper Olive oil Recipe : Coulis: Wash and quarter the tomatoes in a dish to retain the juice. Peel the garlic cloves. Heat the olive oil over a medium heat in a pan, without letting it smoke. Add the garlic and tomatoes in their juice. Season. Cook for 20 minutes with the lid off at first, then with the lid on but make sure the tomatoes don't stick together. Once you have a nice thick sauce, remove from the heat and leave to cool. Blend the sauce and pour into a clean pan. You'll reheat it to serve. Tuna: Heat a little oil in a pan and cook the steaks on a high heat for a few minutes, turning them (you could also use a grill). Lower the heat and leave to cook for around 15 minutes. Reheat the coulis over a high heat. Season the steaks (lightly, because you've already seasoned the coulis). Serve with coulis on the side.

Cajun Jalapeno Poppers
18 fresh fresh jalapeno peppers
6 ounces cream cheese
3 ounces of shredded cheese (cheese of your choice or any mixture, I use 2 or more of the following parmesan, cheddar, colby, ric)
progresso breadcrumbs
1 clove pressed garlic
1/2 ounce olive oil
2 tablespoons finely chopped green onions
1/2 teaspoon chopped cilantro (optional)
12 slices pimientos, finely chopped
3 pinches cayenne pepper (1tablespoon or to taste)
Optional additions
1 ounce finely chopped mushrooms (optional)
2-3 ounces of finely chopped cooked meat (crawfish, ground meat or sausage) (optional)
queso sauce (optional)
sour cream (optional)
picante sauce (optional)
ranch dressing (optional)

Halve the jalapenos leaving the stem attached, de-vein and seed them.
Setting the halved jalapenos and bread crumbs aside, mix all of the other ingredients together.
Take your mixture and completely fill the jalepeno cavities to their brim and set aside.
Put bread crumbs on a flat plate.
Take jalapeno halves, one at a time, and roll cheese side only in bread crumbs and place cheese/crumb side up on a baking pan Once completed if you like a thick crumb layer, you can repeat this step.
If you do not intend to bake finished product skip the rolling part and just lightly sprinkle the top of the jalepenos with the bread crumbs.
Bake at 350 for 15 minutes or until mixture starts to bubble.
I like to refrigerate at least 1 hour prior to baking Sometimes I prepare the day before, cover and refrigerate.
Serve warm, room temperature or chilled with any or all of the recommended sauces.
