I think I can come up with a couple!!

SICILIAN PANINI

1/2 lb. mortadella
1/2 lb. hot capicola
1/4 lb. prosciutto
1/2 lb. provolone
pickle slices (sweet or sour)
hot pepper relish
extra virgin olive oil
4 grinder style sub rolls

Set panini press to "Sear" (High). Cut grinder rolls in half lengthwise. Brush outside, top and bottom with olive oil. Spread inside, top and bottom with hot pepper relish On bottom roll. Line with 3 pieces Mortadella, then top with 3 pieces of hot capicola. Top that with 2 pieces of prosciutto. Place pickles over the meats.
Fold 2 pieces Provolone in half and cover pickles. Add remainder. Roll half on top.

Place on panini press and close for about 2-3 minutes until lightly browned and grilled lines appear.


HOT ITALIAN SAUSAGE AND PEPPERS

6 whole hot Italian sausages
2 cloves garlic, minced
1 large onion
1 green bell pepper
3 tbsp olive oil

Set the sausages to boil for about 10 min, drain set aside. Chop the pepper and onion in 3/4-1" pieces.
Sauté over medium-high heat in a large skillet. Pour in the olive oil, add the diced garlic, peppers and onion. Cook the vegetables just until they begin to soften. Transfer contents of skillet to a large bowl and set aside.

Slice sausages into 1/2" thick coins, as you would carrots. Place one more tablespoon olive oil into the skillet and fry the sausages until they are lightly browned along the edges. Stir in the bowl of cooked vegetables and continue to cook on medium-high setting, stirring every 2 minutes for about 10 minutes.

Butter some Italian bread and set on the edges of a serving plate. Pour the contents of the skillet onto the plate.

Here's a good tortilla soup recipe.
1 chipotle chile seed less or half a chile if you don't like too spicy. This is basically just for taste (if you use canned it's easier)
1 brown onion
4 garlic cloves
1 tomato
Mix all these ingredients in a blender
Then saute this mix in a deep sauce pan or pot with 1 tbsp oil
only saute for a few minutes.
Add chicken broth enough to make a soup
Then add cooked chicken pieces (optional)
1 can of corn (optional)
Cook everything together for about 30 min. (it should boil) until everything is well blended. Consistency should be soupy not thick. add water or broth if it becomes too thick. Make sure you taste and add salt if you like
Then cook some tortilla strip or you can buy them
once you serve, add the tortilla strips on top and add some cilantro. Serve with a slice of lime and some avocado slices to taste. It is delicious!!

CHICKEN EMPANADAS
3 cups chopped, cooked chicken
1 (8-ounce) package shredded Colby and Monterey Jack cheese blend
4 ounces cream cheese, softened
1/4 cup chopped red bell pepper
1 jalapeno, seeded and chopped
1 tablespoon ground cumin
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 (15-ounce) package refrigerated pie crusts
Water
DIRECTIONS
Preheat oven to 400 degrees F. Lightly grease a baking sheet. In a large bowl, combine the chicken and next 7 ingredients. Unroll 1 piecrust onto a lightly floured surface. Roll into a 15-inch circle. Cut out rounds, using a 3-inch cookie cutter. Re-roll dough as needed. Repeat procedure with remaining piecrusts, making 12 to 15 circles total. Arrange 1 round on a clean, flat surface. Lightly brush the edges of crust with water. Place 1 heaping teaspoon of chicken mixture in the center of the round. Fold the dough over the filling, pressing the edges with a fork to seal. Repeat with the remaining rounds and chicken mixture. (Up to this point, the recipe can be made ahead and frozen for up to 1 month). Arrange empanadas on the prepared baking sheet. Bake for 15 minutes.

Okra, Chicken and Rice casserole

1 (10.75 ounce) can condensed cream mushroom soup
1 cup water
3/4 cup uncooked brown rice
1/4 teaspoon paprika
1/4 tablespoon ground black pepper
4 skinless boneless chicken breasts
1 (16 ounce) bag frozen okra, thawed and sliced

Preheat oven to 375 degrees

In 9X13 inch baking dish combine soup, water, rice, okra, paprika, pepper. Place chicken on top of rice mixture.

Sprinkle with additional paprika and pepper.

Cover and bake in the oven for 45 minutes or until chicken is cooked through.

Cassarole Enchiladas:

1-1.5 lbs ground beef/chicken
1 lg can Las Palmas (Red)
1 lg can Las Palmas (green)
1/2 head of cabbage (sliced/shredded)
1/2 bunch of cilantro (chopped)
1 lb quesco fresco crumbled (or whatever shredded cheese you preffer
1 bundle of green onions (chopped)
1pk. corn tortillas
1 cassorole dish (13x9)

Pre-heat over @ 350 degrees. Combine red and green sauce and leave on medium heat, while browning ground beef in another pan. If using chicken boil and shred. Take a corn tortilla and place in the heating sauce for about 5-7 seconds and place on ungreased cassarole dish till bottom is covered, then add a layer of ground beef/chicken, cabbage, cilatro, cheese and green onion. Keep repeating these steps till you get to the top of the cassorole dish with just the layer of tortilla. The very top layer will just be cheese little sauce (whats left over) green onion and cilantro. Cover with foil place in oven, bake for 25-30 minutes. Ready to serve, eat and ENJOY!!!! Make pinwheel sandwiches... use either lavosh or tortilla or flatbread as the base and layer on it coldcuts and spread and such, roll it up and slice. Another is cold pasta salad. Cook whatever kind of pasta you like (fusili, penne, rotini, spaghetti, etc) and chill it, then add in your favorite italian dressing, whole kernel corn (canned, drained), cut up salami, cut up red peppers, cooked (and chilled) green peas, olives and mexican style cheese blend. Yum!

this dish is very easy to make

Mix in a bowl

1 lb of pasta (any kind)
1 cup of sun dried tomatoes with the oil
1 cup of fresh dicd tomato
1 cup of fresh basil
1/2 cup of black loives (optional)
2/3 cup of parmesan cheese
2 cups of diced chicke, shrimp or Artichoke.

Serve cold or hot
