According to a post I saw on TechLore,
RCA (or composite be technically correct) cables carry luma (light/dark info) and chroma (color) signals mashed together, and need to be separated by a comb filter in the TV. This seperation can cause several picture problems and anomalies.
S-Video carry luma and chroma signals seperately, which makes images look sharper, more detailed, and with less noise.

Tie_guy is absolutely right, S Video is better than composite, which is carried over a single RCA connector. Better than both of these is Component, which uses 3-RCA connectors instead of one.

The S-Video cable is for DVD players only, I would go with the RCA myself. It may be a bit cheaper, but worth it.

rca forces into two wire whereas s video splits it into different pairs of wires
s video is the best
