I saute baby bella mushrooms in some butter with garlic first. Add the whole thing including the butter to the alfredo sauce, and toss in a couple handfuls of Parm/asiago/Romano cheese. Maybe a splash of cream. And fresh ground pepper. Toss that with the pasta and sprinkle with fresh parsley. I love it.

Here's an awesome recipe for a Cajun Chicken Alfredo... Yummm!!

4 (5-ounce) boneless, skinless chicken breasts
1 cup blackening spice (recommended: Paul Prudhomme's Chicken)
2 tablespoons extra-virgin olive oil
3 tablespoons minced garlic
1 cup roughly chopped marinated sun-dried tomatoes
1/4 cup white wine
3 cups heavy cream
3/4 cup grated Parmesan
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
1 pound cooked fettuccine
1/2 cup sliced scallions

Preheat the oven to 350 degrees F.
Dredge the chicken breasts in the blackening spice and place in a cast iron skillet over very high heat. Blacken both sides of the chicken and place in the oven for 10 minutes, or until internal temperature of chicken reaches 165 degrees F on an instant-read thermometer. Slice in strips on the bias and set aside.

In a saute pan over medium heat, add 2 tablespoons of extra-virgin olive oil. Add garlic and lightly caramelize. Then add the sun-dried tomatoes and the chicken slices. Deglaze the pan with the white wine. Add the heavy cream, increase the heat to a simmer, and reduce the cream sauce by half.

When the cream sauce is to desired consistency, stir in 1/2 cup Parmesan, salt, pepper, and pasta.

Nest the pasta on large rimmed plates, pour sauce over pasta, and garnish with scallions and the remaining 1/4 cup Parmesan.

A quick and easy dinner I like to make is just browning cubed chicken breast, and add the sauce to that. At the same time I boil shell noodles and about a minute or two before the noodles are done I toss in a bag of frozen peas and carrots. Then mix it all together. It tastes great, and it really is quick and easy.

besides fetticcini alfredo? you can add some chicken stock to your alfredo and mix in a bunch of your favorite vegies and serve over pasta for a primevera.

Toss some cheese torellini and shrimp in the alfredo sauce. It is dee-licious!

Try different types of noodles. I like penne noodles and then try a few pieces of chopped, cooked chicken. Maybe some grilled pieces to add some extra flavor? I think this dish can have some interesting twists, just experiment a little. Enjoy!

I put olive oil in a pan, and fry up some hole garlic for flavor. take out the garlic. cut up some chicken. Fry in the olive oil. Take out chicken.
Fry up brocc, cauliflower, carrots, and onion. boil some fettachine noodles and drain. put noodles in pan with cooked chicken, vegs and pour sauce over and heat.
