The Statement: "I lie about everything"
If this person indeed lies about everything, how would you explain that in that statement they are telling the truth?

Well the answer as I see it is:
In the statement "I lie about everything", the person is lying. So this person lies about some things, or maybe even most things; but does not lie about all things. That makes this persons' statement a lie.
Aside from this answer, all the ones you gave were great. I will just give credit to the person with the most "thumbs up"

If they say they lie about everything, then that statement has to be a lie, too.

Well if they do lie about everything they are telling the truth, which makes it a lie which makes it the truth which makes the statement a lie... if you think about it 4 too long your head will explode.
