I use them as a "twice baked" potato without the skins. I warm them up, add some garlic, bacon bits, cheddar cheese and depending on the current consistency a little sour cream (if really dense and think - if creamy I don't add sour cream).
Or another favorite: Pierogie Casserole - serves 6.
INGREDIENTS
8 ounces lasagna noodles
2 large onions, diced
8 ounces sharp cheddar cheese, grated (2 cups)
4 cups mashed potatoes, made fresh or leftover
4 tablespoons butter
Salt and pepper to taste
Cook noodles according to package and set aside. Brown the butter in a medium skillet, being careful not to burn. Add the onions and sauté until softened and lightly browned.
Combine the cheese and mashed potatoes. Butter or spray a 13x9x2-inch baking dish. Line the bottom with a layer of noodles. Add a layer of potato and cheese mixture then spread with a portion of the onions. Continue to layer the ingredients ending with a layer of noodles topped with onions. Bake at 350° F for 15 to 20 minutes, or until bubbly and lightly browned. Tent with foil if the top browns too quickly.
Notes: Browning the butter adds a lot of flavor to the casserole. If you prefer, it could just be melted. If making freshly mashed potatoes, use about 8 large potatoes. If you don't have enough leftover potatoes, add some fresh or make some from instant potatoes. The recipe can easily be halved.

Leftover mashed potatoes? I purposely make extra a lot of times so I'll have some for another meal because there are so many great ways to use them!
I love using them for potato patties and many of the other ways already mentioned, but our favorite is cheesy potato casserole made like this:
6 cups mashed potatoes
8 ounces cream cheese, softened
8 ounces sour cream
2 Tbs. butter or margarine
1/4 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon freshly ground pepper
2 cups grated cheddar cheese
Mix everything but 1 cup of the cheese together. Put in a well greased 2 quart casserole. Top with remaining 1 cup cheese, cover and bake in a preheated 350F oven for 45 minutes. Remove cover and continue baking another 15 minutes, so the top gets a bit browned.

You could make 'Bubble & Squeak' which is an old traditional English recipe for using up the leftovers. Finally chop half a cabbage and boil it. Heat some butter or oil in a frying pan, then add a finely chopped medium sized onion, cook until soft. Add the mashed potatoes and cooked cabbage and mix well. Fry over a medium heat, turning ocassionally for approx 15 - 20 mins til turning golden. You can put chopped cooked bacon in it too if you wish. Or my nan used to also use the left over roast beef in it from the Sunday roast.

What we do with left over mashed potatoes is form them into a patty. Can freeze or just wrap and leave for next day. We
add some "I can't believe it's not butter" spray, fat free to a
frying pan. Approximately 2 tbls or more. Add patties, sprinkle
with favorite seasoning (garlic powder, onion powder) paprika and
brown on both sides. Patties should be thawed before frying. Very
good.

Sheperd's pie is great..but you could also make a cuban dish called "Papa Rellena" which literally translated means "Stuffed potatoes". You take a ball of mashed potatoes, make a dent in the middle and stuff with seasoned "picadillo" which is a ground beef dish. roll back up into a ball, and lightly coat with bread crumbs. Pan fry and you're all good. DELISH!

the patties are a great idea.
You can also use them to top a sheperd's pie or a pot pie.
I've actually had mashed potatoes & bacon on pizza....sounds funny,tastes GREAT ! I was a bit skeptical at first, but I'm glad I tried it! Brush the crust with a little olive oil & garlic. spread a thin layer of mashed, salt & pepper.mozzarella and bacon. 400 degrees til cheese is melted & bacon is crisp. YUM!!
I serve quite a bit of this in my restaurant.

I heat them up a bit in the microwave, then stir in some sour cream and a bit of milk. I put that in a casserole dish, top with cheddar, and bake until heated through and the cheesy is just starting to brown.
I guess it's sort of like eating the innards out of a twice baked potato. It's really good.

You can mix the mashed potatoes with some tuna, add an egg
make like meatballs but not as round, roll them in bread crumbs and fry them. they are very good you can make a tomato sause or just eat them plain
