I found a couple of recipes and both use corn bread mix and a cake mix. I wonder if that is the secret. Other than that they vary so I'll post links for both. The one on Recipezaar has many great ratings.

Let me add one tip of my own to get soft cornbread. Don't over-mix as that causes it to get tough. The batter will be a bit lumpy.

If you enjoy a sweet and super moist corn bread, you will like this recipe. Serve warm with a drizzle of honey.
Ingredients:
1 1/2 cups all-purpose flour
2/3 cup sugar
1/2 cup * ALBERS® Yellow Corn Meal
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups milk
2 eggs, lightly beaten
1/3 cup vegetable oil
3 tablespoons butter or margarine, melted
Directions:
PREHEAT oven to 350° F. Grease an 8-inch square baking pan.
COMBINE flour, sugar, cornmeal, baking powder and salt in a medium bow. Combine milk, eggs, vegetable oil and butter in a small bowl; mix well. Add to flour mixture; stir just until blended. Pour into prepared baking pan.
BAKE for 35 minutes or until wooden pick inserted in center comes out clean.
FOR MUFFINS:
SPOON batter into 18 to 20 greased or paper-lined muffin cups, filling 2/3 full. Bake for 18 to 20 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 5 minutes; remove to wire racks to cool slightly. Serve warm.

If he's eating fruit, he's getting the same nutrients as veggies. I wouldn't worry about it. But, since you are worried about it, hide the veggies in other foods. Take macaroni & cheese and add pureed carrots. Spaghetti--almost anything could be slipped in there. Applesauce--pureed corn or sweet potatoes. Kids go through phases. My son has barely eaten anything but pizza & chicken fingers all his life. Now all of the sudden, he (17) wants condiments on his hamburger (huh?), he wants a caesar salad with EVERY meal. He'll try new foods and is chowing down like a monster. That makes me happy since he hasn't enough meat on his backside to hold up his jeans! But when he was 8, hot chocolate & marshmallows (I substituted Carnation Instant Breakfast) were the ONLY thing he would eat or drink. He survived, and he's almost 6' tall. Keep introducing the veggies, early in the meal when he's hungry, and one day he'll surprise you and ask for more. TX Mom Mine are 17 & 21

I use Jiffy Cornbread Mix and add canned cream of corn.....to the rest of the ingredients.....it is very moist, and the corn gives it a wonderful texture...

The trick is Jiffy with a pinch of sugar and buttermilk in place of the milk. Oh, and let the batter sit ten minutes before you put it in the oven. Serve with real ,unsalted butter.
