I got this recipe from cookbook called "Anne Lindsay: Light Hearted everyday cooking"
Apple Sauce Spice Cookies
1/3 cup soft margerine
1/2 granulated sugar
1 1/2 cups applesauce
1 tsp vanilla
1 egg
2 cups whole wheat flour
1 tsp each cinnamon and nutmeg
1/2 tsp cloves
1 tsp baking powder
1/2 tsp baing soda
Sugar Topping:
1 tbsp granulated sugar
1/4 cinnamon
Using electric mixer, cream margerine and sugar until smooth; add applesauce, vanilla and egg; beat well. Add flour, cinnamon, nutmeg, cloves, baking powder and baking soda; mix well.
Drop by spoonfuls onto baking sheet sprayed with nonstick vegetable coating. Bake in 350 degree F (180 Celsius) oven for 15 to 20 minutes or until evenly browned.
Sugar Topping: Combine sugar with cinnamon; sprinkle over hot cookies. Let cool on racks.
*Diet and calorie-reduced margerines arent recommended for baking

Chocolate Brickle Sensations
1 c (2 sticks) margarine, softened
3/4 c packed brown sugar
3/4 c granulated sugar
2 eggs
1 t vanilla
1 (4 serving size) pkg instant French vanilla pudding mix
1 t baking soda
1 t baking powder
2 1/2 c flour
1 (12 oz) pkg mini chocolate chips
1/2 (10 oz) pkg brickle (English toffee) bits
Preheat oven to 350. Use parchment paper if desired. In large bowl, combine margarine, sugars, eggs, vanilla, pudding mix, baking soda, baking powder, flour, chocolate chips and brickle bits. Stir by hand. Drop by teaspoons onto cookie sheets. Bake 8 to 10 minutes or until browned.
Peanut Butter Blossoms
1 3/4 c flour
1/2 c sugar
1/2 c brown sugar
1 t baking soda
1 t salt
1/2 c shortening
2 T milk
1 t vanilla
1/2 c peanut butter
1 egg
Hershey kisses
sugar
Preheat over to 375. Mix all ingredients. Shape into 1" balls; roll in sugar; place 2" apart on cookie sheet. Bake 10-12 minutes and immediately top each baked cookie with a kiss, pressing down firmly until edges of cookie crack.
Gooey Butter Cookies
8 oz cream cheese, softened
1 stick butter
1/4 t vanilla
1 egg
1 butter cake mix
powdered sugar
Cream together cream cheese and butter. Add egg and vanilla and mix til smooth. Add cake mix and cool in refrigerator until firm. Drop by teaspoons into powdered sugar. Bake on ungreased cookie sheet for 15 minutes at 350.
Snowball Cookies
2/3 c butter
1 c ground or chopped pecans
1 c flour
3 T sugar
1 t vanilla
Cream butter then add remaining ingredients. Work until well blended. Pinch off bits and roll into balls the size of large marbles. Bake at 375 for 10 minutes. Roll in powdered sugar while hot.

*Hershey Bar Cookies*
My mom makes these every occasion they will go sooo quick and its really easy
1 Cup Margarine ( 2 sticks)
1 Cup Brown sugar
1 Egg
1teaspoon of Vanilla
2 Cups of all purpose flour
preheat oven to 350 degrees 9x13 pan
mix all the ingredients above and flatten into the pan and throw in the oven till golden brown.
while the cookie is baking get 2 of those jumbo sized Hershey bars without almonds and break them up into the squares. when the cookie turns golden brown pull out of the oven place the chocolate pieces on the cookie and let it sit for a bit it will melt slowly then you can spread it all over to cover the cookie then sprinkle some pecan pieces on top. you can cut up the cookie with a butter knife into cubes and let it cool hope you enjoy!

These are tried and true: kind of chewy on the outside and nice and gooey on the inside.
Ingredients:
2-1/4 cups all-purpose flour
1/3 cup Hershey's Cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter - softened (I use Butter Flavor Crisco)
3/4 cup Granulated sugar
3/4 cup Packed light brown sugar
1 teaspoon Vanilla extract
2 Eggs
2 cups Semi-Sweet Chocolate Chips
1 cup Chopped nuts - optional
Directions:
Heat oven to 375 degrees Fahrenheit. Stir together flour, baking soda and salt. In large bowl, beat butter, granulated sugar, brown sugar and vanilla on medium speed of electric mixer until creamy. Add eggs;
beat well. Gradually add flour mixture, beating well.
Stir in chocolate chips and nuts, if desired.
Drop by rounded teaspoons onto
ungreased cookie sheet. Bake 8 to 10 minutes or until lightly
browned. Cool slightly; remove from cookie sheet to wire rack. Cool completely.
NOTES: These were wonderful... kind of chewy on the outside and gooey on the inside. I didn't have any nuts so I used some toffee bits and chocolate chips. YUMMY!

Soft Chewy Chocolate chip Cookies...(the quickest, easiest, tastiest and chewiest cookies ever....)
1 cup. butter
1 cup. sugar
1 cup. brown sugar
2 eggs
2 1/2 cups. oatmeal (powdered in blender)
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla
2 cups. flour
1 pkg. chocolate chips (semi-sweet)
1 1/2 cups. nuts (optional)
Preheat oven to 400 degrees. Cream butter and sugars. Blend in eggs; add oatmeal. Mix dry ingredients. Mix will be very stiff. Mix in chips and nuts. Put 2 inches apart on ungreased cookie sheet. Bake 9 minutes - no more!

Look up coconut or walnut dreams in Fanny Farmer or Betty Crocker. Real rich shortbread crust baked then filled with a coconut-walnut-molasses or honey filling and baked again. My departed sister made that when we were kids over 30 years ago and I never saw the recipe.

Loaded Oatmeal Cookies
1/2 cup (1 stick) butter, softened
1/2 cup vegetable shortening
1 1/2 cups packed light brown sugar
2 eggs
1/2 cup buttermilk
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon ground ginger
1 teaspoon freshly ground nutmeg
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon ground allspice
2 1/2 cups quick-cooking oatmeal
1 cup raisins
1 1/2 cups chopped walnuts
1 teaspoon pure vanilla extract
Brown Butter Icing, recipe follows
Preheat oven to 350 degrees F.
Grease 1 or more cookie sheets. Using an electric mixer, cream together butter, shortening, and sugar in a bowl until fluffy. Add eggs and beat until mixture is light in color. Add buttermilk. Sift together flour, baking soda, salt, baking powder, ginger, nutmeg, cinnamon, cloves, and allspice; stir into creamed mixture. Fold in oatmeal, raisins, walnuts, and vanilla, blending well. Drop by rounded teaspoons onto cookie sheet. Bake for 12 to 15 minutes. Drizzle with Brown Butter Icing.
Brown Butter Icing:
1/2 cup butter
3 cups sifted powdered sugar
1 teaspoon vanilla extract
3 to 4 tablespoons water
In a small saucepan heat the butter over medium heat until golden brown, stirring occasionally. Remove saucepan from heat; stir in 3 cups sifted powdered sugar and 1 teaspoon vanilla. Stir in enough water (3 to 4 tablespoons) to make an icing of drizzling consistency. Drizzle on warm cookies.
Yield: enough to ice 5 dozen cookies
Prep Time: 5 minutes
Cook Time: 5 minutes
Ease of preparation: Easy
Ingredients: eggs, granulated sugar, packed light brown sugar, peanut butter (creamy or peanut), stick butter, vanilla extract, M&Ms, chocolate chips, raisins, baking soda, and quick cooking oatmeal (not instant).
Holiday Monster Cookies
Preheat your oven to 350 degrees. You will need to line your cookie sheet with either nonstick baking mats or parchment paper.
In a large bowl (very large), combine three eggs 1 cup or granulated sugar 1 1/4 cups of packed light brown sugar.
After mixing well, add 1/2 teaspoon of salt 1/2 teaspoon of vanilla 1 12-ounce jar of peanut butter one stick of softened butter.
Mix that well then add 1/2 cup of M&Ms 1/2 cup of chocolate chips 1/4 cup of raisins 2 teaspoons of baking soda 4 1/2 cups of quick cooking oatmeal.
After mixing it all up, drop tablespoons of the mixture 2 inches apart on your cookie sheet.
Bake for 8 to 10 minutes then remove from the oven and let stand for two to three minutes.
If you have a wire rack, move them to that to continue cooling. Then, eat and enjoy!
