I noticed that you said simple and some folks didn't really understand that word. Here's simple. My mom used to call them depression dishes and we had either one of these at least once a week.
Real Deal Macaroni and Cheese
One pound shells
One stick butter
One Big Block Velveta
Milk
Boil Shells, drain. While they're sitting in the colander in the sink, melt butter in the macaroni pot, along with cubed velveta, and a splash or so of milk. Depends on how thick you like it. S and P , maybe a dash of garlic powder. Add cooked shells, mix, over low heat, and pig out. Deadly.
Elbows with butter and crumbs.
One pound elbows
one stick butter
4C or Progresso Italian Bread crumbs
S&P
Plenty of grated romano Cheese
Boil and drain elbows. In same pot, melt butter, add elbows. Mix to coat, sprinkle in crumbs (bout a cup or 2),mix wellover low heat.. Serve immediately with lotsa grated romano on top.
Easy, stick to your ribs, delicious,(although pretty unhealthy), meals. make a salad on the side for some nutrition.

quick and easy and my family loves it .
Mock Roast Beef Sandwiches
1 pound of thinly sliced deli roast beef ( i buy this in the deli as the packaged kind does not work well .)
1 shallot finely chopped
1 can of beef consomme
1 tbl spoon of flour
optional - 2 tbl spoons of cooking sherry
1 tbl spoon of butter
1 loaf of hard type bread like french bread
provolone cheese
melt the butter in a large sauce pan then add shallots and flour making a rue then pour in the beef consomme and stir in the cooking sherry . Bring to a boil this should not be thick but smooth . Toast bread so that it is crunchy but do not use butter just dry toast it under the broiler. Then take your roast beef and kind of just run it thru the sauce and then put it on your bread . You can also add provolone cheese so it will melt on the roast beef . Then take a bit of the sauce and pour into a bowl and dip your roast beef sandwich in it . My family loves this and it is so easy to make and not a lot to clean up .
You can pretty much judge how thick or thin you want the sauce for this but I prefer the thin sauce is better .

My kids love shepherds pie. The way I make it we brown the beef with some onion, add in some tomato sauce and a whole bunch of veggies and some garlic. Once it all starts bubbling, we scoop it into bowls and put cottage cheese or sour cream on top. Sometimes we actually do use potatoes.
Another favorite is Mexican Rice...which is just cooked basmati rice mixed with browned ground beef and onion, salsa, and diced tomatoes. We had it for dinner tonight!

This is SO easy
EASY CHEAP CASSEROLE
1 (8 oz.) cheese whiz
1/2 c. milk
7 oz. spaghetti, break in thirds cook and drain
2 tbsp.butter
10 oz. cooked broccoli
1 c. chopped chicken or turkey
1 (4 oz.) can mushrooms, drained
2 tbsp. chopped pimento
1/4 tsp. salt
1/4 tsp. sage
Combine cheese and milk mix. Toss spaghetti with butter. Combine all ingredients Mix well. Spoon into 2 quart casserole. Cover and bake at 350 degrees for 30 to 35 minutes. Stir well before serving.

I use to make this for my kids when they were younger and they loved it!!!
4 pork chops or boneless chicken breasts
6 medium to large potatoes thinly sliced
1 can of cream of chicken soup
1 can of cream of mushroom soup
Brown meat and put in bottom of a lightly greased 9x9 casserole dish. Mix both cans of soup and add only 1 can of water (or milk) for both. Mix really well. Put 1/2 of potatoes over meat and spoon half of soup over potatoes. Repeat with other half of potatoes. Heat in 350 degree oven for about 1 hour until potatoes are done. The meat will be sooo tender you won't believe it. If you don't like the cream of soups I mentioned you can use others including cream of celery, etc.

* cocktail shaker
* 6 eggs
* 1 cup granulated sugar
* grated nutmeg
* 1 pint half-and-half
* 3 cups Irish whiskey or brandy or rum (divided)
* 1-1/4 tsp. salt (divided)
* 1 pint plus 18 oz. whole milk (divided)
Steps
1
Step One
In a large bowl, separate the egg yolks from the whites, and save the whites for later use.

Step Two
Beat yolks until foamy and add sugar and 1 tsp. of the salt.

Step Three
Continue beating the mixture until thick.

Step Four
Slowly beat in whisky, brandy or rum, milk and half-and-half.

Step Five
Refrigerate mixture for at least 2 hours.

Step Six
Add ¼ teaspoon salt to the egg whites and beat until stiff.

Step Seven
Fold the whites into the mixture.

Step Eight
For each drink, shake 2 tbsp. of the mixture, 2 oz. liquor and 3 oz. whole milk in a cocktail shaker for 10 seconds.

Step Nine
Strain into chilled Irish coffee cups.

Step Ten
Sprinkle with nutmeg.

when I was a kid my mom made this for us and I made it for my daughter, we called it Muscle Builder:
2# lean ground beef
1/2 sm onion, diced
1 can mixed vegetables
1 cup wide egg noodles (about 2 cups cooked)
1/2 can tomato soup
1 C catsup
1 tsp worchestershire
Boil water and cook egg noodles. Meanwhile, in large electric fry pan, or large skillet, brown the ground beef and onion, drain the fat. Salt and pepper to taste. Add the tomato soup, catsup and worchestershire. Mix together and simmer together until noodles are done. Drain noodles and add to meat mixture and simmer about 10 minutes to blend flavors.
Doesn't really build muscles, just a mom's name to make her kids think they would grow big and strong..

This is a basic recipe I use and then one of the variations depending on my mood
BASE INGREDIENTS
Brown 1/2 pound hamburger or ground turkey
Add in one chopped onion, red for color (scallions work)
Add in one diced green pepper
Add in sliced mushrooms (canned ok)
Add in four stalks celery (we like it very small)
Spices - garlic, sage, basil, margorum, oregano to taste
VARIATION 1 to above
Steam above until done but not soft
Add canned tomatoes
Add cup of water
1 cup instant rice
1/2 cup corn
1/4 cup salsa
Serve with mexican chips
VARIATION 2
Steam above until done but not soft
Add cup water
Add 3 tablespoons instant gravy
Serve over noodles or any pasta
Enjoy quick easy and mmmmm
