Okay...take a breath...i am a vegetarian and i have made a killer vegetarian meal...if you are vegan, just sub some ingredients with vegan ones k :D hope you enjoyy
Main Course
My Amazing Tofu Parmesan!! - my meat lover brother enjoyed this and thats really saying something
-1 pkg of extra firm tofu cut into 8 equal slices
-1 egg
-1 cup of fresh bread crumbs -see bottom for how to make
-1/2 cup of grated parmesan cheese, the canned stuff is ok but the fresh is much better
-1 tbsp of herbs de provence - a blend of herbs you can get at any supermarket
-salt and pepper to taste
-1 cup of you fav pasta sauce (mine's prego..its rox)
-1 cup grated parmesan cheese
-Olive oil
preheat oven to 375 degrees farenheit
mix bread crumbs, 1/2 cup of parmesan, herbs and salt and pepper. doing one at a time, dip tofu in egg and then place in the bread crumbs, making sure to coat all sides evenly...
heat olive oil in a large skillet and fry tofu slices in thhe oil until lightly golden brown (but not too crisp, it takes away from the overall result) When the tofu is done, place the tofu in a baking dish and pour sauce over it, if you have crumb mixture left over put that on top too, then place the last cup of cheese all over it...bake in the over for about 10-15 minutes of until the cheese is brown and bubbling...

Fresh bread crumbs - place a few sliecs of bread in a food processor or mini chopper until they are ground and fluffy..
Appetizer-
Avacado spring rolls
-Egg roll wraps, sometimes called wonton wrappers
-1 Ripe avacado
-juice of half a lemon
-1 tsp of minced garlic
-Bean sprouts
-carrots, Very thinly sliced..VERY THIN!!
Mash together the lemon juice, avacado and garlic...spread onto each egg roll wrapper, then put a small bundle of bean sproutsand carrots in each..lightly fry in olive oil until they are golden brown
Dessert -
Chocolate Mousse-
-1 pkg of silken tofu (soft)
-1/2 cup of chocolate chips, melted
Using an electric beater, whip together the tofu and the chocolate until light and fluffy...
Drinks-
Banana Daquiri- for four
3 oz white run
3 oz banana liquer
2 oz white creme de cacoa
1 large rip banana
1 1/2 cup orange juice
1 tsp sugar
12 ice cubes
blend all ingredients in a blender, putting ice in first
There ya go! take my advice on the tofu parmesan!!

Try a casserole dish made with either rice or pasta, and add beans, chopped onions, chopped green and red peppers or zucchini, and make a sauce from canned golden mushroom soup. Cook the rice or pasta, but don't overcook. Drain well and add the beans and veggies. Add the soup right from the can. Don't dilute it with water. Mix the ingredients well and put in a casserole. Top with grated parmesan or cheddar cheese. Put in a 350 degree oven for about 30-40 minutes.
Serve with heated dinner rolls and a caesar salad made with romaine, caesar dressing, garlic crutons, and grated parmesan cheese. For dessert, try layering vanilla yogurt, fresh peaches, and granola in parfait glasses if you have them. If not, any tall glasses will work.
There are many vegetarian cookbooks that can give you ideas for the future. But confidentially, if people are meat eaters, it's not very easy to try and convert them to vegetarianism. Good luck, though!

do a google search on veggie casseroles.Make veggie lasagna.Stoffers makes a great veggie lasagna in the family size frozen.Good luck.

Make a Veggie Chili, and use it to make tacos. Also you can make Veggie fajitas with grilled peppers and onions and potatoes.
