Six Week Bran Muffins

With this on hand in the refrigerator, you can always make fresh, hot muffins.
Ingredients
5 cups Flour
1 box (15 ounce) Raisin Bran
3 cups Sugar
1 cup Oil
5 Eggs
1 teaspoon Cinnamon
5 teaspoon Soda
1 quart Buttermilk
1 cup Raisins
1 cup Nuts (optional)
Preparation
In a very large bowl, pour buttermilk over raisin bran, soak 15 minutes. Add rest of ingredients and stir. Cover and refrigerate. Will keep 6 weeks. Scoop out enough to fill required muffin tins. Bake 20 minutes at 425 degrees F.

1 cup whole-wheat flour
1/2 cup all-purpose flour
1 cup oat bran
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon fine salt
2 large eggs
1 large egg white
1 1/4 cups buttermilk
1/2 cup packed dark brown sugar
2 tablespoons vegetable oil
1 cup chopped dried fruit medley
1/2 cup chopped walnuts
Position a rack in the center of the oven and preheat to 375 degree F. Line 12 (1/2-cup) muffin cups with paper liners.
Whisk flours, oat bran, baking powder, baking soda, and salt in a medium bowl.
Lightly beat the eggs and egg white in a medium bowl. Stir in the buttermilk, brown sugar, and oil. Stir the liquid mixture into the flour mixture until just evenly moist; the batter will be very thick. Fold in the dried fruit. Divide the batter evenly among the muffin cups. Top with the walnuts. Bake until firm when pressed gently, about 25 minutes. Turn the muffins out of the cups and cool on a rack; serve warm or room temperature.

DARK RAISIN BRAN MUFFINS
1 1/4 c. milk
1 1/2 c. unsifted all-purpose flour
1 tbsp. baking powder
1 tsp. salt
1/3 c. sugar
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. ground cloves
1/2 c. (1 stick) butter
1/4 c. light molasses
1 lg. egg
1/2 c. dark seedless raisins
1. Heat oven to 400 degrees. Grease 12 muffin cups.
2. In a bowl, combine the bran and milk; stir to moisten bran and let stand 10 minutes.
3. Meanwhile, combine dry ingredients and blend well.
4. Melt butter. Remove from heat and stir in molasses; when well blended, beat in egg.
5. Add butter mixture to soaked bran and blend. Add to dry ingredients and beat well. Stir in raisins.
6. Spoon into muffin cups and bake 15 to 20 minutes or until a toothpick inserted in center comes out clean.
Makes 12 muffins.
