I bought a bag of new potatoes. Ive never cooked with these before. What are some good recipes using new potatoes? And what's the difference in new potatoes and other potatoes?

New potatoes(sm. red potatoes) are picked when they are young and tender. Red potatoes are generally sweeter than regular white or russett potatoes. I wash them thoroughly leaving the skins on cut them in half, drizzle a good olive oil mixed with some butter, lemon pepper, fresh parsley,sm. white onion diced and several pieces of bacon(raw) cut into sm. pieces. Mix everything together and put in a baking dish uncovered. Bake for 45 min at 350. So easy and so good. Kind of like scalloped potatoes but without the milk.

Red or other new potatoes are less mealy and sweeter than a baking potato (their sugar content hasn't entirely turned to starch yet). I add them, along with carrots, celery, onion, rosemary, garlic, salt, pepper and a little chicken broth when I'm making a whole chicken. They're also good added to pork and sauerkraut. You can also roast them -- quarter them, toss with olive oil, salt, pepper and garlic (rosemary's good here too) and bake on a cookie sheet. When the top side is brown, flip over with a spatula. They're also good just wrapped in foil and baked as you would a regular potato (but takes less time!)

Small red potato's are commenly used in potato salad, and are excellent for roasted potato's. For roasted potato's just wash them first, then cut into quarters (basically bite sized) place them into a large mixing bowl and drizzle olive oil (or other oil if olive is not available) seaso with salt, pepper, garlic or any combination of spices and herbs you prefer. Mix well to make sure all potato's are well coated evenly. The layout potato's on baking sheet, but only 1 layer deep and spread out best you can to make sure they are not all touching each other. Pre-heat oven to 350 and bake for 30-45 minutes depending upon size of cuts. They are excellent for side dish to any meat entree. You can als boil them, then mash them. Red potato's are not as starchy as yukons or idahos, and in my opinion have a better texture and flavor then both of those. Hope this helps. Aso sggest doing the roasted method, but also seaon with dill weed....excellent taste.

Their texture is a bit smoother than other kinds of potatoes. I use red potatoes only in corned beef and cabbage and also Irish lamb stew.

You can boil them with garlic and mash them, or

Cut them in quarters, sprinkle with olive oil, salt, and rosemary and roast about 40 mins; serve as is (you can also add bell pepper and onion slices in to roast) or

Toss the roasted potatoes with a dijon vinagrette for a European style mayo-free potato salad; or

Bake them and then slice into a casserole dish, cover with cheese sauce for potatoes au gratin.

*******HEAVENLY MASHED POTATOES
1 bag red potatoes 5 lb (or potatoe of choice)
3/4 of a 16 0z container of onion sour cream (give or take)
1/4 cup parsley (give or take)
1 stick salted butter (give or take)
3 tablespoons coarse black pepper (give or take)
2 tablespoons coarse kosher salt (give or take)
Leaving skins on the potatoes, wash them well. Large potatoes can be cut into quarters; smaller in halves. Bring a pot of salted water to a boil. Place potatoes in the ater and cook until fork tender. Strain water and leave potatoes in hot pot to dry.
Add the butter and sour cream.
Using a masher, blend all ingredients. Add parsley, salt, pepper; blend with masher. According to taste, mash to consistency desired. For creamiest potatoes, use a wand blender inserted in pot. Add more butter, sour cream, or spices to taste.
Serve as is or place potatoes in casserole dish and bake until top is golden brown and crunchy in a 425 degree oven.

*******RED POTATOES WITH CHEESE AND
BACON
6-8 red small red potatoes
1 stick butter
1 pkg Hormel real bacon pieces
3/4 cup shredded cheddar
garlic salt
freshly ground pepper
salt
olive oil
Preheat oven to 375°F.
Wash potatoes and cut into quarters. Grease bottom and sides of glass baking dish with olive oil.
Place potatoes in a dish and slice stick of butter into 1 tablespoon pats and place on top of potatoes.
Sprinkle with salt, pepper, and garlic salt. Cover with foil and bake until potatoes are tender, about 30 minutes. Remove foil and cover with cheese and bacon pieces.
Place back in oven until cheese is melted, about 5-10 minutes.
These are a great accompaniment to grilled meats and poultry.

You don't have to peel small new potatoes, the skin is very thin.
They're great boiled, tossed with melted butter, salt & pepper and any herbs you have on hand.

Oh, yummmy. New red potatoes are just more tender because they are younger, kind of like veal is more tender.

I like them just plain- wash them & toss them in a pot of water to boil them, then top with butter and a bit of salt. Then you really get that fresh taste. You could always toss them with some fresh dill if you'd like.

i love red potatoes. we just wash them real good and dice them up put them in a bowl of melted butter salt and pepper real good and then put on a aluminum foil lined baking sheet ( just to make clean up easier ) bake at 400 degrees for about 20 minutes or to your liking.

red new potatoes are awesome- quarter them and throw them in some boiled water with garlic, chingos butter, sea salt, and cracked pepper for a few minutes, then strain them, cover them with Parmesan cheese and oregano and put them in the oven until they are slightly brown.

I like to boil them for about five min. then slice thm up with a small onion and some american cheese put in oven for 350 % for about 15 min. yummy
