If you're refering to YHWH, he's not a god of love.

Sometimes a deity requires blood for sustainance. The Aztec gods are an example of this. In some cultures its a sign of respect...just as you would give a guest the choice cut of meat. For Jews (and others) it was a purifying celebration. The animal was sacrificed in the name of the Lord, and then the people ate the meat.

You're also looking at it from a 21st century point of view. If you wanted someone to forgive a transgression of yours back then, gift giving could be very standard.

Most other world cultures have also practiced animal sacrifice at some point, not just that of the "big three" monotheistic faiths. Many have also practiced human sacrifice.

The point? Quite a few, actually...
* to appease one's god(s)
* to honor and/or give thanks to same
* to demonstrate loyalty to same
* to win luck/victory in battle/war
* to sanctify an important event (see Ashvamedha)
* to consecrate an important building
* to ensure a good harvest (or break the cycle of bad ones, aka Domalde)
* to keep one's sworn oath (aka Jephthah)
* to simply uphold the cultural traditions of one's ancestors

God takes sin seriously. The wages of sin was death. Animal sacrifice was something what was necessary then. Now we have the perfect sacrifice in Jesus, and no animal sacrifice is needed.

In Old Testament times it was to show your gratitude by putting yourself in debt so to speak. They sacrificed their best sheep, not a sick one. You can't sacrifice vegetables because they are not a life, they grow back.
In New testament times like we are living now we sacrifice parts of our own life. Not our spare time, but time just for him.
