Deer with out a doubt. My husband and I both hunt. I love it fried, roasted, made into stew, deer burger. There is so much you can do with it. We process it ourselves too. After deer it would be Rabbit, Quail, duck. Have never had dove. You left off turkey. WIld Turkey breast is great. Also Squirells make good stew and dumplings and are ok fried you just need a lot of them. Raccoon is good bbq. Wild hog is great although some say a little tough. Depends to me on how you cook it. Bear is really rich but good in small amounts. Very greasy though.

Actually, Zyphyre, "venison" is any meat from any wild game.

"Game" refers to the wild animal...."venison" refers to the meat from the wild animal. A sentence like "we're having venison for dinner" could mean rabbit or possum or deer etc. Only in the US has "venison" come to refer solely to the meat from a deer.

My prefs: I love deer above almost all the others, but even the best of steaks gets old after a while. Pork, now, I could eat all week long if need be. After those two, fowl and then fish....I'd be a happy camper!

Being a southern boy, I normally pick pork over any of the others, but my favorite ragu does require BambiBurger. Of the remainder of your list, I'd rate my preferences dove, quail, duck, rabbit, but I'm not huge on any of them, probably because they're all that was between me and vegitarianism when I was a kid, when I thought the whole world saved a spot on their plates to put the pellets.

Flavor wise, I`d have to say rabbit.......Quail.......deer........duck.......in that order. I won`t eat dove. Rabbit and gravy & biscuits, with fried potatoes and an onion, Lord, I`d fight a bear just to get to them, lol. Although, breaded and fried deer is pretty hard to beat if it`s fixed right. One question of mine, though. Why didn`t you include fish? Bluegill, crappie, walleye.......rolled in corn meal and fried with a little bacon drippings......MAN!
