Gazpacho (cold soup). http://allrecipes.com/Recipe/Gazpacho-IV/Detail.aspx
In very ot weather I will often serve a dinner of different cold salads (potatoe, pasta, spinach) with rolled up cold cuts or chicken salad and buns.
You can make very nice wraps with grilled or marinated vegetables that have been chilled.

I make this basic pasta salad and keep it in my fridge all summer long. Then I add whatever I have.
1 box of tri colored pasta
1 bottle of zesty Italian dressing
1 medium red onion
1 small red or yellow pepper
1 cup of some type of cheese (I generally use cheddar crumbles, but I have used fresh parm and goat cheese as well. The goat cheese I didn't like so much, but I don't like goat cheese that much)
I have added leftover chicken, shrimp or sliced pepperoni to this. I have also added olives, artichokes and/or blanched veggies to this.

Ham and chicken is good served cold. You can have potato salad, pasta salad, even cold baked beans are good cold. Make a nice fruit salad ( Millionaire Salad, Watergate Salad or Ambrosia) are good cold salads. Gazpacho or cold cucumber soup are delicious !!!

Have a sandwich buffet. Get lunch meats like turkey, ham, salami, roast beef, chicken and tuna salad, etc... and lots of veggies, cheeses, and condiments. Oh and get a few different kids of bread. Rye, wheat, garlic, Italian... YUMMY! Serve with potato salad, noodle salad, chips, fruit, pudding, jello, etc... Good Luck!
