I was a former chef and have used it many times, the whitefish is a cousin of the european shad, in Ontario and Manitoba lakes it is a prized fish, I am not a fan, but the smoked variety is a popular Jewish delicacy, and is the fish used in Gefilte fish, and the roes is fine and small like the lumpfish roe from the Baltic lumpfish, something that is also disappearing.

In the US, you do not find it much outside of the Great Lakes states, in Michigan and Wisconsin they have fish boils using it.
