Does eating pickles counts for eating veggies?

Pickles - not much. Mushrooms - a lot, especially if these are consumed fresh.

Pickled cucumbers have about the same nutritional value as cucumbers.

Pickled peppers have about the same nutritional value as peppers.

Picked cauliflower has about the same nutritional value as cauliflower.

Pickled beets have about the same nutritional value as beets.

Pickling doesn't *add* much nutrition, but it doesn't take much away, either.

Mushrooms are one of the few good sources of vitamin B12 - very important for vegetarians and vegans. In addition, mushrooms are rich in potassium and phosphorous. But they're considered rich in nutrients partly because they are mostly air. It takes a TWO POUNDS of mushrooms to add up to 100 calories. Are you going to sit down and eat two pounds of mushrooms? Of course not. A 4-ounce tin is typically enough for a family of four.

So they don't really amount to a hill of beans, nutrition-wise.

I've found mushrooms to be a good source of iron as well.
