Mormons have excuses for everything, but when I was mormon, I had no freedom to wear a cross. The otherside of the story is that why woudl a christian have to wear a symbol of the the grave or hpw Jesus died, an ICON, but not all christians wear the cross and they have freedom to do so or not to do so, Mormons do not have a chose in the matter, none of them wear crosses, none of them! They however believe in angel worship, which the bible warns about. The church was started by an angel and they have Moroni on every temple:
colossians 2:18
Let no man beguile you of your reward in a voluntary humility and worshipping of ANGELS, intruding into those things which he hath not seen, vainly puffed up by his fleshly mind,
2 Cornithians 11:14
And no marvel; for Satan himself is transformed into an angel of light.

We believe that that is glorifying Christ's death. Besides, it's pretty morbid to have such a gruesome tool of execution as a religious symbol. If Christ had been born and died in the old west and hung would you have a gallows and a noose as your religious symbol? Think about it!

The cross was one of the most inhumane forms of execution ever devised by man or devil. Most men hung on the cross took days to die. It was painful and torturous.
As important as Christ's sacrifice on the cross for our sins, it would really mean nothing to us if it weren't for His resurrection. Without that, He would have been, to us anyway, just another dead prophet. But, He rose from the dead, to conquer death and hell, and showed Himself to His disciples that they would KNOW that His death was not the end, but the beginning.
so, that we choose not to put ANY symbols on our chapels where we do our regular worship, that we choose not to wear crosses, that does not mean we do not recognize His sacrifice.

I responded: “I do not wish to give offense to any of my Christian colleagues who use the cross on the steeples of their cathedrals and at the altars of their chapels, who wear it on their vestments, and imprint it on their books and other literature. But for us, the cross is the symbol of the dying Christ, while our message is a declaration of the Living Christ.”
He then asked: “If you do not use the cross, what is the symbol of your religion?”
I replied that the lives of our people must become the most meaningful expression of our faith and, in fact, therefore, the symbol of our worship.

Mormon's prefer to focus more on Christ's life and teachings and his reserection, than on his death, although it is still important to it all.

because the mormons dont believe in the cross, they believe jesus did die on the cross but he didnt choose to die on it. example: if your friend died in a car crash, you wouldnt keep a statue of a car around to remember her would you?
