During the school year I usually only have about 3 cups of very strong tea before I face my class and during the summer I usually sleep through breakfast. But, if I DO eat during the morning hours, it's usually a bagel or a bowl of cereal.

***Pancake With Grilled Banana***

Ingredients
1/3 cup plain flour
2 tsp caster sugar
1 egg
1/3 cup milk
1 tbsp butter
2 bananas, peeled

Honey or golden syrup, for drizzling

Method
1. Sift flour into a large bowl. Add the sugar and make a well.

2. Crack in the egg. Add the milk and whisk until smooth. Leave to rest for half an hour.

3. Heat half the butter in a non-stick frying pan.

4. Pour in some of the pancake batter (you can make the pancake big or small) cook over low heat until golden brown underneath.

5. Turn the pancake over and cook the other side. Do this with the remaining batter.

6. Slice bananas into rounds or lengthwise. Place on a baking tray, dot with remaining butter and sprinkle with icing sugar.

7. Grill until golden brown and caramelized.

Note
Serving suggestion: Place pancake on a plate, spoon some banana on one half of the pancake and fold over the other half. Drizzle with honey or golden syrup.
