I am a pastoral minister in a large catholic church and I can tell you that there are no liturgical norms that require gift bearers to be catholic. If it is required in some church it is only because of a personal requirement of the pastor and has nothing to do with the Church.
We have non-catholic as gift bearers at wedding Masses, Funeral Masses as well a weekend parish Masses.

I don't see why not. technically if you ask the church will probably tell you that they need to be Catholic, so what I would suggest you do is not ask. Just decide so and so is going to present the gifts and that is that. They probably will not ask you if they are Catholic or not.
If your church has a wedding coordinator you can ask that person, but I know from experience if the priest is a stickler for the rules then they may say no. If they are pretty flexible and easy going then they probably will not mind.
I say it is your wedding and you should just tell them this is how you want it!!

You'll have to check with your priest, but officially no, they do not need to be Catholic. Some churches or priests do have separate requirements, depending on their individual interpretation of the rules.

i believe so. it doesn't entirely matter. so long as you're comfortable w/ the blessing associated but if you're in a church and tolelrating a mass i assume you won't care.
