we're having a outdoor cookout by a lake side & it's seashell/water themed , our cook backed out @ the last minute what do you think we should make ? we're gonna have potato , mac & pasta salad , but we now don't know what to do about the cookout part on the grills . thanks for any help

We had an outdoor wedding last year. We did a pig roast. It turned out great. The person that we hired brought the pig already cooked in roasting pans so there was no pig to look at. He also brought mac and potatoe salad. He did roasted potatoes also. He brought all the rolls and the salt and pepper. He did all the serving to the guests. It was great and very inexpensive. We also did meatballs and baked ziti. We made up our own meat and cheese trays, vegetable trays and fruit tray. Good luck and congratulations.

If it's seashell themed by a lake, I'd go with some combination for a surf-n-turf.

Grilled Lobster Tails and Filet Mignon???

Grilled Shrimp Kabobs and Rib Eye???

Grilled Swordfish and Sirloin???

Grilled Tuna Steak and Prime Rib???

Grilled Salmon and Tenderloin???

Steamers, chicken beef and veggie kabobs, maybe throw some shrimp on there if in budget (i'm invisioning, small onions, green and red peper slices, pineapple chuncks, zucchini, and that yellow squash)?, grilled bbq chicken? maybe a bbq rub instead of a sauce...

Trying to stick with the seashell/water theme, while catering to different tastes....

I don't know how many people are atending, I know it's a little expensive , but what about shrimp?? you can also combine it with chicken, chicken is the classic one.
Buy more chicken than shrimp, if it's jumbo you can serve maybe a couple or three per person, you have lots of more good food, this is just to complement.

Don't worry... you know people are never satisfied.... so what you give is what yo can do.......the important thing is that you are getting married.

It sounds like the perfect place for seasoned grilled chicken breasts, some steaks or kabobs with vegetables. Not hamburgers and hot dogs.

shrimp kabobs
maybe grill some fish, tuna, swordfish, salmon- thre are tons of great marindades for fish now in the bbq section of most grocery stores, same for chicken...
chicken
ribs
burgers
you can do sausage instead of hot dogs if ya don't want to have plain ol dogs.

First of all when is the date? could you possibly find another cook in that small of a time period? Not sure how you feel about clams but you could do a clam bake for a part of it..they are really tastey if you like sea food.
