This is the first time I've made enchiladas with corn tortillas and they keep splitting right down the middle when I roll them. Any way to prevent this? Thanks

Try doubling them and wetting them with a little water! Works for me every time!Or better yet cook them in butter a little before making the enchilladas!

Do not use water and do not microwave. Do you think the Mexicans had microwaves 40 years ago? Water just dissolves the tortilla. Whether you like it or not, you need to heat some oil, and quickly fry those corn tortillas for perhaps 10 seconds on each side. I've known many people with your same problem, and every single one of them did not fry their tortillas before stuffing. Just put the cooked tortilla on paper towels to soak up the oil, and pat with paper towels to remove excess on top. I've been making homemade enchiladas for over 40 years and do not have any tearing problems because I fry the torts in oil first. Just don't get them crunchy, and don't simply quick turn them in the oil. They actually need to cook for a tad on each side. This will help your problem. I've helped a few friends who've come to me your same issue. Please try it.

take a small sauce pan and pour some of the enchilada sauce that you are using into it, bring it to a slight simmmer, then give each tortilla a good 10 second cookin on each side, maybe a little more if the fisrst one still splits. This softens the tortillas and makes them easy to work with !

dip the tortillas in hot oil for a few seconds before rolling them; it works best to have a few tortillas at a time and dip them with tongs into a heated fryer, but if you have a frying pan with some hot grease you should be able to do dip one at a time, just turn it over in the grease with your tongs...

i always fry them in oil in a frying pan for about 20 seconds i make sure the tortilla has oil on both sides then i roll them that has been working for me no rips or tears just right.

the best way to keep tortillas from tearing is to fry them slightly or dip in the sauce

if you heat them up slightly in the microwave it will help.

the biggest problem i have found though is the quality if tortilla. keep trying different brands until you find a nice thick one that you like.

fry them in oil for about 30 seconds to 1 minute on each side. pat dry with paper towel and voila! good luck
