I've been wondering this for awhile.

I know what kind of cut of meat it is, and where it comes from...but why do they call it "New York" strip steak.

Maybe because the cut was orignally the Delmonico, which was a restaurant in nyc.

The strip steak (also known as striploin, shell steak, Delmonico, New York or Kansas City strip steak) is one of the highest quality beef steaks on the market. In British Commonwealth countries, this is called "porterhouse steak", which has a different meaning in American English. Cut off of the back of the cow from the strip loin, the strip steak consists of a muscle that does little work, and so it is particularly tender. Unlike the nearby filet mignon, the strip loin is a sizable muscle, allowing it to be cut into the larger portions favored by many steak eaters.

When still attached to the bone, and with a piece of the beef tenderloin also included, the strip steak becomes a T-bone steak or a porterhouse.

My theory has always been that it's because the meat from a New York Steak was cut off of the T-Bone which coincidentally is shaped somewhat like the state of New York. For this reason I am curious as to why the T-Bone or Porterhouse isn't called a New York.

weel, you know most steaks have their own unique features, like the rib loin for example... most meats come in different sizes
