Why the coffee grounds in beef rub I saw over at William-Sonoma?

The coffee grounds tend to bring out the deep rich flavors of the other spices, much like salt or sugar would. It's hard to describe the actual flavor but my brother makes a spice rub with coffee grounds in it and it is absolutely delicious. Hope this helps you a little bit.
