There's nothing I like better than a cobb salad. So here you go:
3 cloves garlic, finely chopped
2 tablespoons grill seasoning blend (recommended: Montreal Steak Seasoning by McCormick)
2 tablespoons Worcestershire sauce, eyeball it
2 tablespoons red wine vinegar
1/3 cup extra virgin olive oil, plus some for drizzling
8 pieces "thin cut" chicken breast cutlets
2 slightly under ripe Hass avocados - dark skinned, but still firm
2 vine ripe tomatoes cut into wedges
4 cups arugula
8 strips bacon, thick sliced
1 lemon, zest and juiced
1 tablespoon Dijon mustard
Salt and pepper
1/3 pound blue cheese, crumbled
Heat a grill pan or outdoor grill to high heat.
Mix garlic, steak seasoning, hot sauce, Worcestershire sauce and vinegar. Whisk in the extra-virgin olive oil. Put the mixture in a shallow dish. Add the thin chicken cutlets to the other. Toss to coat all of the meats thoroughly and marinate for 5 minutes.
While the chicken is marinating, cut the avocados in half lengthwise cutting around the pit. Separate the halves then, using a spoon, scoop out the pit, then use the spoon to scoop the avocado from its skin. Chop the avocado flesh into bite size pieces add to a mixing bowl. Add the tomatoes, watercress and crisp chopped bacon. Dress the salad with the juice of 1 lemon and a generous drizzle of extra-virgin olive oil, salt and pepper.
Grill the thin cut chicken cutlets 3 to 4 minutes on each side. Remove both meats from the grill to a cutting board to rest for about 5 minutes. Cut the chicken into thin strips. Add both meats to a platter or dinner plates. Top the meats with a mound of the salad. To make the dressing, combine in a small bowl the lemon zest and juice, Dijon mustard, salt, pepper, crumbled blue cheese, whisk in 3 tablespoons EVOO. Pour the dressing over the salad.

Here are some:
CANTONESE SPINACH SALAD
Salad:
2 bunches spinach, washed and trimmed
1 can drained bean sprouts
1 can drained sliced water chestnuts
2-3 sliced cooked eggs
4-5 strips cooked bacon, crumbled
Dressing:
1 c. oil
3/4 c. sugar
3/4 c. red wine vinegar
1 chunked sweet onion (small)
2 teaspoons Worcestershire sauce
salt and pepper
Blend all dressing ingredients well in a blender. Toss salad ingredients with dressing just before serving.
COMMITTEE SALAD
Yield: 8 to 10 servings
DRESSING:
1/2 cup olive oil
3 tablespoons red wine vinegar
1 tablespoon lemon juice
2 teaspoons sugar, or a little less
1/4 teaspoon salt or less
1/2 teaspoon dry mustard
1 or 2 cloves garlic, crushed
SALAD:
2 tablespoons butter/butter
1/2 cup sunflower seeds,shelled
1/2 cup slivered almonds
1 head leafy lettuce
2 or 3 green onions, finely chopped
1 x 10 ounce can mandarin oranges, drained
1 ripe avocado, peeled and sliced (optional)
Combine dressing ingredients in an empty jar. Shake to blend.
Heat butter/butter in frying pan and saute sunflower seeds and almonds until golden brown. Drain in paper towels thoroughly, changing towels after they get saturated with the oil. Prepare remaining ingredients. Add cooled seeds and almonds. Toss with the dressing just before serving.

Have you ever tried Cobb salad? They used to be very popular. I've noticed they are starting to regain popularity. They're VERY good!
Cobb Salad
3 hard-cooked eggs, peeled
8 bacon slices
1 head romaine lettuce, leaves separated and torn into bite-size pieces
2 cups chopped watercress (tough stems removed)
4 cups diced cooked turkey or chicken
2 avocados, pitted, peeled and diced
2 tomatoes, chopped
1/4 pound plus 1 ounce Roquefort cheese, crumbled
1/4 cup red wine vinegar
1 teaspoon Worcestershire sauce
1/2 teaspoon Dijon mustard
1 clove garlic, minced
1/4 teaspoon salt
1/2 teaspoon coarsely ground black pepper
1/3 cup extra-virgin olive oil
Several long chive lengths for garnish
Cut the hard-cooked eggs into 1/2-inch dice. Set aside.
In a large frying pan over medium heat, fry the bacon about 10 minutes or until crisp; transfer to paper towels to drain. When cool, crumble and set aside.
Make a bed of lettuce on a platter, shallow bowl, or individual serving plates. Arrange the eggs, bacon, herbs, watercress, turkey or chicken, avocados, tomatoes. and the 1/4 pound Roquefort cheese in a neat pattern atop the lettuce, in rows or in a checkerboard pattern, covering the lettuce almost completely.
In a small bowl, whisk together the wine vinegar, Worcestershire sauce, mustard, garlic, salt, and pepper. Using a fork, mash in the remaining 1 ounce Roquefort cheese to make a paste. While whisking, slowly drizzle in the olive oil to form a thick dressing.
Pour a little of the dressing over the salad and garnish with chive lengths. Serve immediately. Pass the remaining dressing at the table.
Makes 4 to 6 servings.

This layered salad is wonderful. Change the amounts or ingredients to your liking.
1 head lettuce, chopped
1 green pepper, chopped
3 stalks celery, chopped
1/2 small onion or green onions, chopped
1 small box frozen green peas, thawed
1/2 pound bacon, cooked and crumbled
3 hard boiled eggs, sliced
1 to 1 1/2 cups mayonnaise
2 tbps. sugar
1 cup shredded cheddar cheese
Layer all ingredients in a large oblong dish or large bowl except for mayonnaise, sugar and cheese. Mix together your mayonnaise and sugar until sugar is dissolved and spread over your salad. Top with your shredded cheese.

This salad comes about by making 3 choices:
1 I like krab but smoked salmon or really good canned tuna, cooked chix etc..
2 your choice of frozen veggies. I don't like most raw veggies but frozen then thawed are very good. Asian mix, just use what you like.
3 One last choice, Salad dressing. Anything goes it's up to you
Toss it all together add cheese what ever.
As you see you can make this a hundred times and not do it the same way twice.

How about a pasta salad?
I box of Radiatore pasta (cooked as directed on box)
1 small green pepper, cut into thin strips
2 tomatoes, cut into chunks
1/2 lb/ chunk of cheese, cut into cubes
1/2 lb. chunk of pepperoni, cut into chunks
1 can of black olives, drained & sliced
1 bag of shredded carrots
1/2 cup italian salad dressing
1/4 cup grated parmesan cheese
Combine all ingredients in a large bowl, and toss lightly.
Refrigerate overnight. Enjoy!

Here is a vegetable salad....
Get lots of vegetables; carrots, broccoli, cauliflower, green/red/yellow peppers, onions, cherry tomatoes, cucumbers. Cut them or break them into tiny pieces, put them in a bowl and cover with Italian Dressing. Add one tablespoon of sugar, mix and refrigerate for about an hour. Stir every so often to mix the vegs with the dressing. Yummy!!
Or do the same with nice, ripe tomatoes. Cut into bite-sized chunks with sliced onions, cover with Italian Dressing and let sit in fridge for about an hour, stirring every so often to distribute the flavors. The juice is wonderful sopped up with bread!!

Renita's Fruit & Nut Chicken Salad
2 washed cored chopped apple 1/2 inch pieces with skin on (I prefer golden delicious Needs to be yellow more sweet- You want a crisp sweet apple for this.)
1 can of white chicken meat drained
1/2 cup chopped walnuts (can sub pecans)
1/2 cup mayo
1/2 tsp black pepper
optional
1/2 cup raisins( I prefer golden)
Mix all together in large bowl. Refrigerate left overs.
Great by itself, on toast , in sandwich or my favorite over bed of Hearts of Romaine Lettuce.
This is my own recipe.

get a package of maccaroni one package of immatation crab meat or real meat if u prefer it immitation is cheaper one package of old bay seasoning and an onion u wont use the whole onion and a lil bit of miracle whip prepare maccoroni as normal u know boiling and draining sit it to the side place in a bowl with the crab meat and chop the onion in small peices u place in the bowl mix all ingredients with teh miracle whip sprinke with the old bay chill for an hour there u hav it
