okay, if they RSVP for a "guest" they should put the guests name on the RSVP. have you gotten any back yet and they did not list them?
it is your wedding, you can have a seating chart or not. some guests like to sit at an assigned table, so they know they will know the people there. others sorta want to sit with whoever and just chat. if you have a lot of local people at your wedding, they will probably sit with each other. but if you have random friends, co-workers, people traveling 1000 miles, it is best to seat them with people they know.

No, personally I don't think "and guest" is offensive.
In the past, I've been to many weddings were I was "and guest" Personally, if I'm the guest of a friend of the bride or groom, I would not expect them to know my name. Does not bother me one bit.
But, if you want to be completely right, then you should call and ask.

"and guest" is fine on the place cards if they did not write who will be attending. Just did that very thing for a friends wedding, don't worry it will work out. (Better to use and guest than to mispell someones name too!)

i wouldnt call but i would put "The Guest of Lisa Jones" it sounds better or i went to a wedding where they did Lisa Jones Place 1 and Lisa Jones Place 2 for the guest

Hmmm hopefully people will put who they are bringing. But if they don't I would call those people who put just guest and say oh I'm sorry I forgot to have you put they're name. That way they feel personally invited too. :) Good Luck and Congrats.
