One of my favorite tasty dishes. Saute cleaned shrimp (25-30 ct med size)in 1 tbs olive oil. Have rice cooking on the side (or noodles if you prefer) Once the shrimp have started to turn pink, add a bag of mixed, frozen veggies. (I like the oriental or italian blends) Season w/salt, pepper and whatever your tastebuds go for. Cover & Simmer about 5-7 minutes or until veggies are soft. Top over prepared rice. Easy, tasty and low fat..

Chicken and Red Potatoes
1 Cut up whole Chicken
1 Large Onion
1 Large Green Pepper
4 tablespoons Olive Oil
2 Fresh Rosemary Sticks
2-4 Med. Red Potatoes, cut in quarters
Salt and pepper (to taste)
4 garlic cloves
Paprika (to taste)
Add Olive oil to a hot pan. Season chicken with salt, pepper, garlic, paprika, add to hot pan. Sear the chicken pieces to get good canalization. Add Onions. Once chicken and onions are caramelized take out of pan. Add potatoes (cut side down). Add peppers, onions, chicken, and rosemary back to pan on top of potatoes. Lower the heat and cover the pan. Cook for another 30-45 mins.
You could probably heat the oven to 400 degrees and put everything in a roasting pan and cook for 45 mins. if you want to make it really simple.

You need chicken, green beans, butter, garlic powder and parmesan cheese.
melt the butter in your skillet. Shake in garlic powder and parmesan cheese. Coat your chicken in this by setting it in the skillet and turning it over so it is covered, (I use chicken breast). When it browns and you turn it over add a can of drained green beans. I also use a can of drained mushrooms. That is it. Very simple and all in one pan.. ENOY
