I have a problem with making good brownies. does anyone know how to make a kind thats mostly mushy but really good and chocolatey? ive had a wonderful one with a crispy thin thin layer at the top and the middle pretty wet and chewy.


Please include a recipe and baking directions? i need to perfect my brownies!

Here's a great recipe, enjoy

CHEWY BROWNIES

1/2 cup butter
3 oz. unsweetened baking chocolate
1 oz. semi-sweet baking chocolate
1 1/4 cups sugar
1/2 cup pecans or walnuts, chopped
1 teaspoon vanilla
1/2 teaspoon dark rum
3 eggs
1 1/4 cups flour
1/4 teaspoon salt

Grease bottom of an 8 inch square baking pan.
Melt both chocolates with butter in a medium saucepan stirring over low heat until smooth (about 5 minutes). Remove from heat.

Stir in sugar. Add eggs, one at a time, mixing well after each addition. Mix in flour, salt, vanilla, rum and nuts, stirring only until mixture is smooth and ingredients are combined. Once flour has been added, do not overmix to prevent toughening.

Spread mixture into prepared pan.

Bake for 25 to 35 minutes or until brownies begin to shrink from sides of pan.

Allow to cool before cutting into squares.

Note: if your brownies are dry or tend to be overbaked consistently, reduce the temperature of your oven by 25 degrees.

Recipe can be doubled by baking twice the amount of all ingredients in a 13X9 inch pan. Bake for 35 to 40 minutes.

Chewiest Brownies
INGREDIENTS

* 1 cup unsweetened cocoa powder
* 1/2 cup melted butter
* 2 cups white sugar
* 2 eggs
* 1/4 teaspoon salt
* 1 cup all-purpose flour
* 2 teaspoons vanilla extract
* 1/3 cup confectioners' sugar for decoration

DIRECTIONS

1. Preheat oven to 300 degrees F (150 degrees C). Line one 9x13 inch pan with greased parchment paper.
2. Combine the cocoa, melted butter, sugar, eggs, salt , flour and vanilla. Mix until well combined. It should be very thick and sticky.
3. Spread mixture into the prepared pan. Bake at 300 degrees F (150 degrees C) for 30 minutes. Cool completely before cutting into squares.

These brownies are heavenly and to die for! I am sorry to say I didn't come up with this recipe. It is a lot of work but very good. If you want plain brownies then leave out the coconut, pecans, marshmallows, and fudge topping.
Mississippi Mud Brownies:
1 1/2 sticks butter
1 3/4 cup sugar
3/4 cup cocoa powder
4 large eggs
2 tsp. vanilla extract
1/2 tsp. salt
1 1/2 cups all purpose flour
1/2 cup pecans, chopped
1/2 cup flaked sweetened coconut
3 cups mini marshmallows
Fudge Topping:
5 tbsp. butter
1 square unsweetened chocolate
1/3 cup cocoa powder
1/8 tsp. salt
1/4 cup evaporated milk or heavy cream
1 tsp. vanilla extract
1 cup powdered sugar
1/2 cup pecans, chopped
1/4 cup flaked sweetened coconut
Preheat oven to 350 degrees and grease and flour a 13 x 9 inch baking pan. For brownies: In saucepan, melt butter over low heat and whisk in sugar and cocoa. Remove from heat and beat in eggs one at a time. Beat in vanilla and salt. With a wooden spoon stir in flour just until blended and then stir in pecans and coconut. Batter will be thick and spread in pan and bake for 25 minutes. Remove from oven and spread marshmallows over brownies and return to oven to bake about 10 minutes until they are puffed and golden. Cool completely on wire rack. For topping: In saucepan, melt butter and chocolate over low heat. Stir in cocoa, salt, evaporated milk, vanilla, and sugar until smooth. You can pour this over the cake or stir in the pecans and coconut as well or put those on top of the brownies and fudge topping.

I just made a batch of these for my friend. They're perfect

1/2 cup butter, melted
1 cup sugar
1 tsp vanilla
2 eggs
1/2 cup flour (increase to 3/4 cup if they're too soft)
1/3 cup cocoa powder
1/4 tsp salt(omit if using salted butter)
1/4 tsp baking powder
1/2 cup chopped nuts or chocolate chips

Blend butter, sugar and vanilla. Beat in eggs. Sift together flour, salt, baking powder, and cocoa powder. Blend until well combined. Spread in greased 8x8 pan, top with nuts or chocolate chips and bake at 350degrees for 22-25 minutes.

Decrease oven temp to 325 degrees if using a pyrex pan, or the edges will burn.

take your favorite box & follow the recipe but add 1/2 to 1 cup of chocolate chips, 1/4-1/2 cup chocolate syrup & when they are done baking frost with your favorite dark chocolate frosting.... if you want it to be frosted then wait till it cools otherwise frost while it is still warm & the frosting will melt down into the brownie & make it even mushier.... or if your really nuts about chocolate do both

I don't have any recipes to make brownies from scratch, but I can tell you that adding an extra egg to your current recipe will make them more fluffy and cake-like. mmmm...
Now I want brownies!! lol

I always buy the box kind(mix), the fudge brownies or double chocolate ones are like what you are looking for.
