We are having New York strip steak (it has been marinating today in a beer/garlic mixture) I am going to make a balsamic reduction (balsamic vinegar, sugar) with carmelized onions for on top.

I then got small red bliss potatoes. They are going to be boiled and then smashed flat and fried in bacon grease. They are they going to be topped with the bacon, onions, and parmesan cheese. (healthy... obviously not lol... but its ok to splurge every once in awhile!)

Does this sound ok? Any suggestions to improve?

Since it sounds awesome and you are already splurging I would make some form of a pasta salad or noodle with it.

Oh man! It sounds like a great dinner. The steak was fine enough, but those smashed potatoes are wonderful! My family didn't quite know what to make of it when they first saw smashed/fried potatoes, but they loved how they were crisp and browned on the outside and creamy and a bit sweet on the inside.
What I would want with a rich meal like this one would be a salad that was crisp and dressed with a dressing that was piquant. The dressing wouldn't need to be complex--you've got a lot of strong flavor in your other dishes--but a simple vineagrette would suit it very well.
As far as dessert--again I'd go for simple and refreshing, something like sorbet or sherbet (even ice cream sounds too heavy after this menu).
Any extra space at your table tonight?

The only thing that I would add is a fresh (we are in summer ya know!!!) tomato salad......if you have friends with gardens with an abundance of tomatoes, and maybe some basil, you could make a dynamite Caprese Salad (tomatoes, fresh Mozzarella and Basil leaves in a simple vinaigrette).......but the rest of the meal sounds first class.....You might want to get a great lager beer or a good red wine (I'm on a Merlot and Shiraz kick right now) to complete the steak and potatoes....and you're right, you can splurge every now and then.....Enjoy, and let us know how the meal turned out. (I'll tell ya right now, it'll be fabulous!!!)

sounds OK but instead of putting a balsamic reduction on the steaks try garlic mushrooms saute' this way your your potatoes will be the only thing with onion and just right for a balance.

I'd definitely throw in some roasted broccoli or asparagus, or even a simple green salad. The steak sounds great and so do the potatoes, but the green would perk up the meal and it would look very pretty, too.

the taters sound great, I'm not sure you really need the balsamic reduction if you have been marinating in the beer/ garlic.. not sure how the flavors would go, i personally would use 1 or the other , i would keep the caramelized onions though :)

sounds like a good dinner to me, although i would probably add a veggie, my favorite is getting fresh green beans from the store and boil them in water with a little bit of butter and when they are just about done i chop up some bacon (previously cooked) and toss it in.

Sounds pretty good. I do think you need some sort of salad or vegetable portion. Whether or not you do, make sure the food looks good. Presentation is everything; after all, the sight of the food is the first impression.

It sounds really good! Another good this is add some chese to the stake and mabey some mushrooms. THat would go really well with what you are making! Mabey add in a small salad too! Yum!!
