then the centrel locking goes crazy.

I had a Ford Galaxy (in the 60's) that the gear shift kept unlocking out of park on. It almost ran me over a couple of times. Yours sounds like a door lock problem so it might be a short in the system. Any water get into the lock motor?

A problem with the wiring somewhere in the lock circuit. Moisture or skinned insulation on the wires could be doing it. When the car vibrates it could be causing it to rub on a bare metal surface and make contact to unlock the doors. good luck.
