Cut 6 tortillas into 1" strips, deep fry 2-3 minutes until crispy, drain in a single layer on cake rack over paper towels, sprinkle immediately with cinnamon and sugar mixture. Serve warm or wait until they cool. These do not store well so only make what you intend to eat that day. Refreeze the remaining tortillas or make some of the delicious quesadillas some of the other folks suggested, add rice, beans some shredded lettuce and diced tomato and you have an authentic Tex-Mex meal.

Without asking WHY you have 20 packages...
If they're flour tortillas you can make lots of things, from burritos to quesadillas.
I like quesadillas myself. Grill some chicken, or vegetables, or whatever, gets some shredded cheese, either lay one tortilla (depending on size), and another to cover it, down on a pan sprayed with Pam or rubbed with cooking oil, or for a big tortilla just use half and flip it over - put the cheese and fillings on the tortilla, have it on medium heat, and as it starts to brown, flip it, et voila - quesadilla. Serve with Pico de Gallo (similar to salsa) if you have it, or just salsa if you don't.
Enjoy!

CHICKEN TORTILLA DUMPLINGS
Stew 1 chicken and salt. Remove from bones; set aside. Heat broth to boiling. add cut up tortillas, 10 to 12 depending on size. Cook 10 to 15 minutes then add cream of chicken or mushroom soup. Add chicken and heat to simmering. Cook 10 to 15 minutes. This is an easy way to make dumplings. Serves a large group.

I love using tortillas to make breakfast burrotos to freeze for later. I just fill them with scrambled eggs, cheese, diced bacon or sausage & diced tomatoes if I have them (or onions, chives, peppers etc.)
Another use is to make all kinds of chicken, bean & cheese burritos to freeze for later.
To eat right away I love filling with some Hummus, pesto if I have it and feta or any cheese. Diced tomatoes are so yummy too, then I just toss (open) in the oven at 250 F or so for a few minutes and fold in half and then in half again for a quick sandwich. Easy to eat while on the road, too ;)
For a grill treat I spread penut butter & jam or peanut butter & chocolate chips (or all :) and roll and toast until warm. I usuallly just roll and place on a sheet of foil, covering it nearly complete so they warm fast. Marshmallow is also a yummy filler as is any berry, honey or other sweet treat you can think of.
Roll them with cooked diced sweet potatoes, cranberries & brown sugar and grill :) Super sweet treat! Add chopped pecans should you have them.
The bags of julienned & washed broccoli & carrots is a good filler too as well as spinach or mesculin.
Now I am hungry....
:)

The DH mad a good "tortilla enchilada casserole" (lasagna-style) last night.
It had 3 sets of the following 4 things in layers:
....tortillas
....pieces of a leftover pre-cooked grocery store chicken
....shredded cheddar and jack cheese
....Lawry's enchilada sauce (in small pkg) mixed with a can of tomatoes he'd blended to a pulp
(all stacked into a casserole dish, then put in the oven covered till it was heated through)

quesadillas, tortilla soup, fajitas, breakfast burrito
cut it up into wedges, bake them, and eat them with salsa or make nachos!
use them in roll-ups: spread your ingredients on top of the tortilla and just roll it up! try these combinations -- peanut butter and jelly, chicken with lettuce tomato and ranch dressing, or pizza sauce and mozzerella
make it dessert by adding pie filling and warming in the oven, then sprinkling with powdered sugar
make appetizers by layering tortillas with grilled vegatables, pesto, provelone, and chopped sun dried tomatoes. Throw a tortilla on top and heat through, and cut into bite sized peices. YUMMY!

Google "roll-up recipes". Use for burritos, or "wraps"--which are regular sandwich fillings using tortillas instead of bread. Taco pizzas in a pizza ovewn, or top them with mozzarella and pepperoni & put in pizza oven.Deep fry them for salad shells.
