I had a recipe today that called for baby yukon gold potatoes... in this recipe you boil the potatoe... and kinda smush it down and then fry it...

Well.. they didnt have baby yukon gold potatoes so i had to get the red bliss potatoes (only small ones available)

Will those work the same?

the skins are thicker on a red bliss so you may want to peel them after you boil them.

They'll work well. Red Bliss are not that different. The skins will be fine. Don't worry about them. White Rose would have worked as a substitute as well.

I use all three interchangeably in dishes like homefries and the boiled, smushed, and fried taters that you're making. I tend to prefer the Yukons a little over the other two for taste, and for texture in mashed potatoes, but the difference is not that great that I'd hestitate to substitute any of them, one for the other.

I would agree with Da Answer is 42. I use them interchangeably. However, yukon golds have a slightly more "buttery" taste which is nice, because then you don't need to add as much butter to them if you are doing mashed potatoes.

it will be fine,each kind of potato has a slight taste difference, but most are interchangable
